Most of the world celebrated New Year on January 1st, but Asian communities are now getting their opportunity to do so with Lunar New Year. January 22 marks the beginning of the Year of the Rabbit, and not only is it a time for family and friends, it is also a chance to indulge in delicious food!

Whole Fish with Ginger and Scallion Oil

It is common to eat a whole fish at new year because the Chinese word for fish (yu) sounds similar to that for “abundance”. While catfish is the most traditional, the dish can also be made using sea bass or carp. Steam the fish and drizzle it with hot oil made with ginger, scallions, coriander, and soy sauce.

Dumplings

Not only are dumplings delicious, but they also represent wealth and longevity, making them an important food for this time of the year. Fill your dumplings with anything from pork to chicken, prawn, mushrooms, scallions, and cabbage. Then, steam or fry.

Longevity Noodles

As the name suggests, these noodles, known as Yi Mein, symbolize longevity. According to Chinese tradition, the longer the noodle, the luckier you’ll be, with some measuring as long as two feet! Stir-fry the noodles with chicken, mushrooms, green beans, and ginger.

Matzo Ball Soup

You’ve probably heard of this and associate it with motherly warmth. Matzo ball soup is a classic chicken soup with balls made from matzo meal and egg cooked inside. These dumplings range from small, dense, and chewy to large, soft, and melt-in-your-mouth, depending on who makes them.

Chicken and Dumplings

As the American south’s answer to Matzo balls, chicken and dumplings features a creamy chicken soup base (often created with canned cream of mushroom soup or similar), carrots and peas, and of course dumplings. Rather than matzo meal these dumplings are made with flour or a similar starch mixed with heavy cream, so they are generally chewier and much richer than their counterpart.

Potsticker Soup

Using frozen Chinese potstickers, this Asian-style soup is super easy to make. Just whip up a comforting broth of chicken stock, soy, and sesame as well as garlic and ginger, throw in whatever veggies you want and the cooked potstickers, and top with sesame seeds and green onions.

You don’t have to spend a whole day making apple dumplings thanks to this recipe! The whole thing will take less than an hour and the end result is one of the best desserts you’ve ever tried. You will get 8 delicious dumplings, which you can upgrade with a scoop of vanilla ice cream on top.

Ingredients:

  • 1/3 cup brown sugar
  • 2 small apples, cored and peeled
  • 1 teaspoon cinnamon
  • 1/3 cup granulated sugar
  • 8 oz tube refrigerated crescent roll dough
  • 3/4 cup Sprite soda
  • 1/2 cup unsalted butter

Instructions:

  1. Set the oven to 350 F degrees and prepare an 8×8 baking dish.
  2. Cut the apples into 4 wedges, peel them and core them.
  3. Take out the dough from the packaging, then divide it into 8 triangles.
  4. Get the apples and put one wedge on top of each triangle, making sure it’s at the small end. Close the engs and place the triangles on the baking dish.
  5. Melt the butter, then combine it with the brown sugar, granulated sugar, and cinnamon. Mix these ingredients together.
  6. Pour the mixture on top of the apple dumplings in the dish. Add the Sprite but only on the sides of the dish and the dough.
  7. Bake for 35 to 40 minutes, and when done leave them out for 10 minutes.

Gyoza is a dumpling hailing from Japan which is very similar to a Chinese potsticker. They actually were created in China, but have been changed slightly and adapted heavily into Japanese cuisine. What makes them different is their slightly thinner dough as well as being smaller than a potsticker. These delicious dumplings may seem like hard work to make, but they take only an hour and three ingredients. Let’s get cooking!

Method

  1. Measure out 2 cups of flour and sift into a large bowl
  2. Boil 1/2 cup of water and dilute 1/2 teaspoon of salt into it
  3. Combine the water and the flour together with a rubber spatula until everything is mixed together
  4. Knead the dough for ten minutes
  5. Divide the dough in half, and roll each half into a long log
  6. Wrap each log in plastic wrap and allow it to rest for 30 minutes
  7. Cut the log into 1-1 1/2 inch pieces
  8. Sprinkle some cornstarch onto your surface and roll the pieces into a ball
  9. Smash them down with your hand, and then take a rolling pin and flatten them further
  10. Use a cookie cutter to cut out perfect circles and use the scraps to make more wrappers
  11. Stuff with your choice of filling, fry, and enjoy!
