One of our favorite parts of fall is finally having an excuse to make our favorite soups and stews. It’s the perfect time to try out new recipes and perfect the ones we’ve been making for years—like this chili.

All you have to do is dice an onion and throw in the rest of the ingredients and in forty minutes, you’ll have a bowl of hearty, delicious chili that will transport you right back to the comfort of your childhood home, warming your belly and your heart. 

Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepper
  • 1 diced yellow onion
  • 1 pound of ground beef
  • 1 ½ cups of beef broth (can be substituted for 1 ½ cups of vegetable broth)
  • 2 tablespoons tomato paste
  • 2 cans of diced tomatoes (15 oz.)
  • 1 can kidney beans (16 oz.) (drain and rinse)
  • 1 can pinto beans (16 oz.) (drain and rinse)
  • 1 spicy pepper (optional—we like jalapenos)

Chili Seasoning:

  • 2 tablespoons chili powder (or hot paprika)
  • 2 tablespoons ground cumin
  • 1 ½ tablespoon garlic powder
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • ¼ teaspoon cayenne pepper

Instructions:

  1. Chop up your onion, bell pepper, and hot pepper. Heat olive oil in a large pot and throw the diced veggies into the oil to cook for about five minutes. 
  2. Add ground beef to the pot and cook for about six minutes, until browned. Add the spices and tomato paste and mix until combined.
  3. Pour in the rest of the ingredients—the broth, diced tomatoes, and beans. Mix well.
  4. Bring the chili to a boil, and then simmer for 20-25 minutes, uncovered. Stir every so often. 
  5. Remove it from the heat and let stand for about 10 minutes. Serve in bowls with cheddar cheese and sour cream and enjoy!

Fall is rolling around, and you may be wondering what’s in season right now. It’s always best to use seasonal fruits when cooking because they will be fresher and riper than at other times of the year. Fruit is also cheaper when it’s in season because it is cheaper to grow and doesn’t need to be shipped from far away. Here are some fruits that come ripe in September and a dish you can make with each.

Stone Fruit: Peach Cobbler

September heralds stone fruits like peaches, plums, and nectarines. These fruits make great on-the-go snacks because they can be eaten with one hand. A great dish to make with them is peach cobbler, which really hits the balanced notes of a summer/fall dish that September requires thanks to the bright juicy peach flavors combined with cinnamon and warm spices.

Blackberries and Blueberries: Blueberry Pancakes

These dark berries are delicious to pop in your mouth fresh by the handful, and are especially expensive when they’re not in season so it’s a good idea to take advantage when they’re available. One yummy and classic dish you can make is blueberry pancakes. If you like you can also cook down both of the berries with sugar for a syrup to pour on top as well.

Melon: Green Smoothies

Melons are a great snack for the warmer beginning of September, as they are juicy, bright, and refreshing. They come in big sizes so it’s easy to cut them up and have the slices for a snack throughout the week. Because they’re so sweet and juicy, melons are a common ingredient in green smoothies. They help take the edge off the “healthy” taste and add a special something as well.

We don’t know about you, but our fall smells like apples and cinnamon! That’s why today we’re sharing this amazing recipe for caramel stuffed apples that will make your home smell incredible and your family asking for more.

They are incredibly easy to make and will become your favorite dessert as soon as you try them. Scroll down for the recipe.

Ingredients

  • 2 apples
  • 2 tbsp melted butter
  • 3 tbsp cinnamon sugar
  • 1/4 cup water
  • 16 caramel candies
  • 1/2 cup semisweet chocolate chips

Sooo many caramel apple pics coming in this weekend!! Love it!!!! Are you making apples??? . . What toppings are you using?? OR what toppings would you use if you were making them??? . . Adding toppings is ALL about the timing!!! . . There are two timelines to follow: . . FIRST! Adding toppings directly to the caramel! This needs to be done as soon as your caramel is dipped. It needs to be sticky!! So, dip your caramel and then quickly get your toppings on. We keep the toppings in a bowl and roll the apples right into the bowl. Don’t be afraid to push them on!! Once covered with your toppings, place your apple on a piece of parchment in the fridge. The caramel will finish cooling and your toppings will stay in place. After 5-10 minutes of cooling, you can add a drizzle of chocolate for a finishing touch!! This first method works best for big chunks of topping- like peanuts, crushed candy bars, pretzels, coconut flakes, and our newest obsession: cacao nibs! . . SECOND: Adding a dip of chocolate over the caramel! For this method to work, your caramel needs to be cool before adding chocolate. So, dip the apple, let it cool for a bit and then place it in the fridge on a piece of parchment. After 5-10 minutes, remove the apple and dip in the chocolate. The cool caramel will help the chocolate set quickly, keeping it on the apple. If you want to add some fine toppings to the chocolate, wait for the chocolate to set for a bit. We watch for the edge of the chocolate to look matte instead of shiny and then add the toppings. This works great for adding cinnamon sugar, fine coconut, sprinkles, crushed Oreo, and little candies. . . So! There you have it!! Hopefully these tips will help your caramel adventures!! Instructions

  1. Preheat the oven to 375°F.
  2. Cut the apples in half and remove the core.
  3. Place the apples in a baking dish and with melted butter. Add cinnamon sugar over them.
  4. Pour water into the dish and bake for 20 minutes.
  5. Take out of the oven and place 3-4 caramels on top of each apple. Return to the oven for another 15 minutes.
  6. Melt the chocolate chips and drizzle the chocolate over the baked apples.
  7. Share with friends and family and enjoy this delicious fall treat!
