Greek salad, or Horiatiki, is a brightly colored, flavorful dish that epitomizes the simplicity and elegance of Mediterranean cuisine. This classic recipe is easy to prepare, requires no cooking, and is perfect for adding a burst of fresh flavor to your meal. Let’s jump. 

Ingredients:

  • 3 large ripe tomatoes, cut into wedges
  • 1 cucumber, sliced into thick half-moons
  • 1 red onion, thinly sliced
  • 1 green bell pepper, sliced
  • A handful of Kalamata olives
  • About 7 oz block of feta cheese, cut into cubes or one large slice
  • Extra virgin olive oil, for drizzling
  • Red wine vinegar, to taste
  • Salt and pepper, to taste

Instructions

  1. Begin by preparing your vegetables. Wash the tomatoes, cucumber, and bell pepper. Cut the tomatoes into wedges, slice the cucumber into thick half-moons, and slice the bell pepper. Thinly slice the red onion. 
  2. In a large bowl, combine the tomatoes, cucumber, red onion, and green bell pepper. Add the Kalamata olives.
  3. Top the salad with the feta cheese. Drizzle extra virgin olive oil generously over the salad. Add red wine vinegar to taste. Season with salt and pepper. 
  4. Gently toss the salad just before serving and enjoy it fresh.

If you thought that Greek salad was the most popular salad dish in Greece, you may want to sit down. Although it may get all the glory, most Greeks actually eat far more Maroulosalata which translates to “lettuce salad”. Simple, zingy, and fresh—what’s not to love?

Ingredients:

  • 2 romaine lettuce hearts
  • 4-5 scallions
  • ¼ cup fresh dill, finely chopped
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon mint, finely chopped
  • ½ cup Greek olive oil
  • 3-4 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon dried oregano
  • A pinch of salt

Instructions:

  1. Thinly slice the lettuce and scallions and place them in a bowl with the fresh herbs. 
  2. Whisk together the olive oil, vinegar, oregano, and salt until it emulsifies. 
  3. Pour the dressing over the salad greens and toss.

A Greek salad is something you can find at most diners, and definitely any Greek restaurant. The interesting thing is that a Greek salad is almost identical to the salads they actually serve in Greece, so it’s nice to know that you’re making and eating something pretty authentic.

A Greek salad is super easy to put together, has a ton of fresh ingredients, and can easily be bulked up if you add a protein source like chicken, salmon, or chickpeas. No one can say no to this at a dinner party, so let’s get started.

Recipe

  1. Start off by mixing the salad dressing together. This involves combining 2 tablespoons of fresh lemon juice with 6 tablespoons of good quality olive oil. Mix this together until it combines to make your vinaigrette, and then add in salt and pepper to taste, and a good 2 teaspoons or more of dried oregano for that signature Greek flare.
  2. Thinly slice half a red onion and add that to a large bowl.
  3. Slice up a cucumber, half of a red and green bell pepper each, and a few fresh tomatoes.
  4. Cut a head of romaine lettuce in half, and then roughly chop that and add it to the bowl as well.
  5. Pour in cubes of feta cheese and black or kalamata olives, and finally finish with a toss and the addition of the salad dressing.
