Ingredients:
- 3 large ripe tomatoes, cut into wedges
- 1 cucumber, sliced into thick half-moons
- 1 red onion, thinly sliced
- 1 green bell pepper, sliced
- A handful of Kalamata olives
- About 7 oz block of feta cheese, cut into cubes or one large slice
- Extra virgin olive oil, for drizzling
- Red wine vinegar, to taste
- Salt and pepper, to taste
Instructions
- Begin by preparing your vegetables. Wash the tomatoes, cucumber, and bell pepper. Cut the tomatoes into wedges, slice the cucumber into thick half-moons, and slice the bell pepper. Thinly slice the red onion.
- In a large bowl, combine the tomatoes, cucumber, red onion, and green bell pepper. Add the Kalamata olives.
- Top the salad with the feta cheese. Drizzle extra virgin olive oil generously over the salad. Add red wine vinegar to taste. Season with salt and pepper.
