Pickled onions are a delicious treat to have in your fridge. They work great in salads, on sandwiches, on top of curries and even in soups. They’re also really easy to make and a relatively healthy condiment to have on the side. If you want to make them for yourself or give them to your friends, this is the recipe for you.

Recipe

  1. Begin by thinly slicing a red onion and putting the slices into a jar with a lid. Make sure it’s big enough for there to be a lot of liquid covering everything.
  2. In a saucepan, combine 1 1/2 cups of white vinegar, 2 tablespoons of sugar, and 1 tablespoon of salt. This is the base for the pickle recipe, but if you want to make it more flavorful, you can add in things like allspice berries, whole peppercorns, garlic, herbs, or more.
  3. Bring the mixture to a boil over medium heat and once it’s boiled, pour it over the onions in the jar.
  4. Put the lid on the jar and let it sit out until it’s completely cooled before putting it into the fridge.
  5. Once it’s in the fridge, wait at least one day but up to 3 or 4 before you dig in.

Weekend project!!! Pickled red onions take 10 minutes to make, last for weeks, and only need 4 ingredients. They perk up tacos, are great on fancy toasts and add nice crunch and zing to sandwiches πŸ₯ͺ and salads πŸ₯—. Oh yhea, and they make anything you put them on instantly prettier 😻.⁣ ⁣⁣ Method: Slice a red onion into thin slices. Just use half if it’s really big. I like half moon slices 1/8” – 1/4” thick. A mandolin is great but a knife works.⁣⁣ ⁣⁣ Pack the onion slices into a large glass jar or two smaller jam jars.⁣⁣ ⁣⁣ In a saucepan heat 1 cup vinegar, (I use white wine, rice or champagne vinegar but any vinegar will do), 1/2 cup water, 2 Tbs sugar and 1 Tbs salt.⁣⁣ ⁣⁣ Once the vinegar is boiling and the sugar and salt have dissolved, pour the mixture over the onions. You may have more liquid than you need depending on the size of your jar(s). Use it to pickle another veg or discard it.⁣⁣ ⁣⁣ Put a lid on the jar(s) and refrigerate. They will turn bright pink almost immediately and you can use them as soon as they have cooled down. Pickles are essential to so many different types of meals. Whether you like them on a sandwich, a burger, or on the side of your fried chicken, pickles are that crunchy acidic bite that so many dishes need.

While regular pickles can take up to a week to make, if you can’t wait that long, we can teach you how to make pickles that are ready for you while you sleep! This recipe for quick pickles is super delicious, really flavorful, and will take you no time at all.

Recipe

  1. In a saucepan, pour in 1 cup of apple cider vinegar, 1/4 cup of brown sugar, 1 teaspoon of salt, 1/2-1 teaspoon of red pepper flakes (depending on how spicy you like it), 1 teaspoon of mustard seeds, 1 teaspoon of coriander seeds, 1/2 teaspoon of celery seeds, 1/2 bunch of fresh dill minced, and 1 cup of water.
  2. Bring everything to a boil over medium heat.
  3. While the mixture is cooking, slice up as much red or white onion as you like, anywhere from a quarter to an entire onion.
  4. Slice up 1 pound of cucumber and put that into a jar with the onion.
  5. Once the mixture is boiling, turn off the heat and pour it over the cucumbers and onions.
  6. Screw on the lid, put it in the fridge for 10-12 hours, and you have pickles galore!
