Homemade gnocchi is a seemingly difficult recipe to make at home, but if you use instant mashed potatoes instead of regular mashed potatoes, you will save yourself so much time!

Recipe

  1. First, measure out 1 cup worth of instant mashed potatoes into a bowl, and still in an equal amount of hot water, and mix.
  2. Whisk an egg together and pour that into the mix and stir.
  3. Finally, add in 1 1/2 cups of all-purpose flour, along with 1/2 teaspoon of salt, 1/2 teaspoon of dried basil, 1/4 teaspoon of garlic powder, 1/4 teaspoon of dried sage, and 1/4 teaspoon of ground black pepper.
  4. Mix everything together until a rough dough forms.
  5. Lightly flour a surface and form the mixture into a proper dough by kneading it for 3-5 minutes.
  6. Cut the dough into 4 parts, and roll each part into a log.
  7. Slice the log up into small pillows of gnocchi, and allow it to rest for 15 minutes.
  8. Bring a pot of water to a boil and salt generously. Drop the gnocchi in and make sure not to touch them while they’re in the water.
  9. Use a spider or slotted spoon to take the gnocchi out once they’ve risen to the surface, and then serve with your favorite sauce!

Recipe

  1. Start by following the package details of the instant mashed potatoes so you have two cups’ worth. Allow that to cool since you’ll be using your hands to form them.
  2. Then, set up the dredging station. This will allow the croquettes to get really crunchy in the oven. Beat 2 eggs in a bowl, adding flour and any seasonings to another, and breadcrumbs into a third.
  3. Take about 1 tablespoons worth of mashed potatoes and form it into a ball. If you want, make an indentation and add some cheese or deli meat inside it, and close it into a ball again.
  4. Roll the ball in the flour, then the egg, and finally into the breadcrumbs.
  5. Place the croquettes onto a parchment-lined baking sheet, and when all have been made, put them into a 450 F oven for 8-10 minutes until they are golden.
