After coming home from work at the end of a long day, you can’t even think about beginning to cook a meal. Boxed mac and cheese in your pantry is tempting, but what can you do to make it a little more sophisticated? Here are some simple ways to upgrade mac and cheese.

Veggies

Not only will adding vegetables boost the nutritional value of your meal, but it will also add extra flavor. Broccoli, spinach, mushrooms, and cauliflower are all great additions. You can also sauté up some onions or cherry tomatoes to throw in as well.

Spice It Up

The next time you decide to make boxed mac, try throwing in some spices you already have in your pantry. Red pepper flakes, chili powder, garlic, or Italian seasoning is an easy and budget-friendly way to boost your mac and cheese. If you’re a fan of spicy food, try adding hot sauces such as Sriracha or Tabasco.

Make it Cheesier

Stick to this simple rule: you can never have too much cheese in mac and cheese. Add an extra layer of cheesy flavor to your Mac by throwing in some parmesan, goat cheese, mozzarella or whatever other cheese you have in your fridge.

Working from home allows you to have tons of options when deciding what to eat for lunch. You’re not limited to grabbing something easy to transport or having to prep your lunch the night before—anything in your kitchen is at your disposal. If you feel like you’ve been in a meal rut, here are four easy and quick lunch ideas.

Mezze Spread

The beauty in this meal is that you can use whatever ingredients you have leftover from the night before and some fresh vegetables. Start with your leftovers like hard-boiled eggs, chicken, or shrimp and build around them. We suggest using five to seven other components and one dip like hummus, tahini, or babaganoush. Top it off with some feta cheese, olive oil, and za’atar spice for a restaurant-worthy meal.

Last Night’s Meal

Don’t let the leftover pasta go to waste. Simply toss it with olive oil, vinegar, canned tuna, arugula, capers, and tomatoes for a hearty pasta salad. If you had chicken or salmon last night, make a salad or sandwich with the leftovers.

Soup or Chili

Soups and chillis are super satisfying and they’ll keep you full. Add some pesto, yogurt, toasted nuts, parmesan cheese, shallots, and chilies, and don’t forget some fresh bread to dip into it.

Salads

Salads are one of the easiest dishes to throw together and you can always switch up the proteins so you don’t get bored with them. We love canned tuna, shrimp, shredded chicken, boiled eggs, or steak in our salads.

EASY SALMON SALAD RECIPE✨🥗 topped with pickled red onions, walnuts, feta cheese, avocado and egg! 🥑 — I don't know about you guys, but I've been so bad about eating lunch since staying at home 🤷🏻‍♀️ But this salad is my new favorite – it honestly tastes AMAZING (even @my.second.stomach devoured it 😂), and if you prep some ingredients beforehand, it only takes minutes to make! — Here's some of the ingredients I prepped before and just keep in my fridge: Pickled Red Onions 🧅 🔹Thinly slice half of a red onion 🔹Add onion slices to a jar with the juice of two limes, 1 tbsp of apple cider vinegar, and salt + pepper to taste. 🔹Let sit in the fridge overnight (or at least a few hours) to get that bright pink color! Soft Boiled Eggs 🥚 🔹Boil water in a large pot and add eggs in. Cook for 6-7 minutes and then put the eggs in a bowl of ice water to stop the cooking. Peel carefully once cool and keep them in the fridge for the week! Salad Dressing 🍋 🔹Combine lemon juice (I used half of a lemon), 1 tbsp of olive oil, and a splash of balsamic. Season with salt and pepper to taste and mix thoroughly. For the salmon, I seasoned it with salt, pepper, and paprika. Sear it in a hot pan with olive oil for about 4 minutes each side! — Once you have all the ingredients just top your salad with whatever you want! 🤗 I personally used arugula, walnuts, feta cheese, pickled red onions, avocado, egg, scallions, and some @traderjoes Everything but the Bagel seasoning 🌿 — Hope you guys enjoy + save this recipe for a quick + healthy meal idea! ❤🤤

Breakfast, lunch, and dinner are three common meals most of us have during any given day, with little to no variation. But have you ever wondered why is it like that? Is there any real reason we typically eat three meals a day or is it just something we do out of habit?

As it turns out, having three meals per day is more related to popular culture than what our bodies biologically need. This was confirmed by Yale University’s history professor Paul Freedman who wrote Food: The History of Taste.

In his book, Freedman writes that there’s no real reason we eat three meals per day from a biological point of view. Having breakfast, lunch, and dinner fits our cultural patterns and enables us to sit down and eat a meal with the whole family, every day or once in a while.

Lately, however, the pattern has started to change. Freedman notes that with people working more and more hours and having inconsistent schedules, we’re slowly moving away from the common concept of having three meals a day. Today, we’re more likely to snack throughout the day and have a big meal in the evening after work.

Bell peppers are a great ingredient to use in any way you can. What is not widely known about them is that every color, red, green, yellow, and orange, are actually the same type of pepper just picked at different times! They actually do have different tastes and even different nutritional information. For example, red peppers, since they have been on the vine the longest, have 10 times more beta-carotene than green peppers, and 1.5 times more vitamin C. However, all types of peppers have both these vitamins along with B6 and many more. Peppers are perfect for any time of the day, so try using them in one of these recipes!

Nachos

If you are a Tex-Mex fan, you surely love nachos. If you want to make them a bit healthier, add in some sauteed bell peppers on top! Slice up some peppers and onions and saute them with paprika, oregano, salt, and garlic powder until they are soft.

Shakshuka

Shakshuka is an Israeli and North African egg dish which uses diced peppers and tomatoes to create a sauce in which eggs are poached. Spice this dish up with cayenne pepper or harissa paste and you can enjoy it for breakfast, lunch, or dinner.

Avocado is one of the most popular vegetables all over the world. It is so versatile and delicious, which is why most everyone loves avocado. If you are a true avocado lover, try these recipes for a snack, lunch, and dessert, all made with avocado.

Snack

If you are looking for a super creamy type of dip, make this guacamole cream. Simply mash avocado, season with salt, pepper, and add lemon juice. To put it over the top, add in some mayonnaise or sour cream and enjoy with chips.

Lunch

For a vegan alternative lunch, try this faux tuna salad style sandwich. Mash chickpeas and add garlic powder, salt, pepper, cumin, and paprika. Then, mash an avocado and add it to the chickpea mixture. Finish with some lemon juice, and you have a great star for a sandwich.

Dessert

Avocado is normally used in savory applications but is actually great in sweet dishes as well. To turn avocado into a dessert, make this avocado mousse. Put an avocado in a food processor with cocoa powder, agave syrup, and a bit of salt. Pulse together until fully combined, then place in the fridge to chill. This dessert is also vegan so you can make it for everyone!

Nachos

If you are a Tex-Mex fan, you surely love nachos. If you want to make them a bit healthier, add in some sauteed bell peppers on top! Slice up some peppers and onions and saute them with paprika, oregano, salt, and garlic powder until they are soft.
