]]>This Tex-Mex dish, which was born on both sides of the border in the early 20th century, consists of strips of grilled meat that have been combined with sliced peppers and onions in order to make the filling for tacos or burritos.
My favorite way to prepare fajitas is with chicken, and it’s so easy to make at home. Here’s how to prepare your own perfect chicken fajitas in the comfort of your own kitchen.
Start off by cutting the large chicken breast into thin strips. Go ahead and season the chicken with half of all of the spices and then set aside.
Next, you’ll want to slice the red and green pepper as well as the medium onion into thin strips. Go ahead and put them into a large skillet with a tablespoon of olive oil and add the other half of the spices into the pan. Sautee them on medium-high heat until they start to soften.
After this, add the chicken cuts into the pan. Reduce the pan’s heat slightly, and then leave the chicken inside to cook thoroughly with the peppers and onions for approximately 5 minutes.
Your fajitas are done! Now, you can serve them in tacos or burritos with other ingredients like sour cream and guacamole. Enjoy!

Check out this recipe for spinach and tomato quesadillas that is devilishly easy to make.
Start off by rubbing the butter on one side of each of the two flour tortillas. These will be the outer sides of the tortilla. Place one of them, buttered side down, in a pan on the stove.
Next, wash the spinach leaves and the Roma tomato under running water. You’ll then want to dice the tomato into small chunks.
After this, sprinkle the colby jack cheese on top of the tortilla that is in the pan. Place a layer of diced tomato on top. Finally, spread out the spinach leaves evenly on top of the cheese and tomato.
Now, it’s time to put the other tortilla on top and put the stove on medium-high. Cook until the tortilla is golden brown, and then flip.
Once both tortillas are golden brown and the cheese is melty, your quesadilla is ready. Enjoy!

]]>These Mexican-inspired chicken thighs mean that you don’t have to go out to a Mexican restaurant to enjoy these flavors. Check out this simple and easy-to-follow recipe here and get cooking!
Start off by taking the bone-in chicken thighs and placing them in a large stovetop pan. Once you’ve done this, take your olive oil and pour some into the pan. Coat the thighs with olive oil and leave just enough in the pan to coat it.
Next, give the chicken thighs a sprinkle with all of the spices. You can adjust the quantities of spices based on your own personal preference. I like to include plenty of garlic powder and go easy on the black pepper, but you can vary this based on your own tastes.
Next, take the Cholula hot sauce and douse the chicken thighs. Rub the sauce into the thighs so that they are evenly covered and given a thorough coat.
Next, you’ll want to add just a dash of lime juice on top of the thighs to give them a citrus kick.
Cook covered, on medium, for 8-10 minutes, flipping halfway through.
Enjoy!

1 lb skinless boneless cooked chicken breasts
9 whole wheat flour tortillas
1 cup nonfat Greek yogurt
1 1/2 cups shredded cheddar cheese
1 1/2 cups salsa
1 15oz can refried beans
2 cups cooked brown rice
1/2 cup chopped cilantro
The meat should be cooked and chopped.
Set the oven to 375 F degrees and prepare a baking pan with cooking spray.
Add 1/2 cup of the salsa to the pan and use a spoon to achieve an even layer. Top it off with 3 tortillas. The size of the pan should be 9×13 inches.
The next step is to add 1/3 of the chicken meat on top of the tortillas.
Continue with 1/4 of the beans, 1/4 cup of the cooked rice, and 1/2 cup of the cheese.
Now, add three more tortillas, and continue layering with the rest of the beans, rice, and cheese. Add the remaining salsa on top of the cheese.
Get foil and cover the baking pan. Cook it in the oven for half an hour. When it’s done, all you have to do is cover the top with Greek yogurt.
