Ingredients

  • 2-6 eggs (depending how many people you’re serving)
  • 2 tbsp of tomato paste
  • 1 red pepper
  • 1 onion
  • 2 Tsp of smoked paprika
  • 1 Tsp of cumin
  • Salt and pepper to taste
  • 1/4 cayenne – or to taste based on spice tolerance
  • Zaatar to taste
  • Handful of fresh herbs (Parsley or Cilantro)
  • Tablespoon of olive oil

Instruction

  • Heat your oil in a nonstick skillet or frying pan.
  • Add your spices on low heat and cook until fragrant.
  • Thinly slice your onions and peppers and cook until soft.
  • Add your tomato paste and add some water on the sides of the pan and mix the spices, peppers, and paste into a sauce.
  • Let the sauce cook for a few minutes until bubbling.
  • Crack your eggs into the sauce, and let them cook covered on a low flame until desired consistency.
  • Garnish with fresh herbs and zaatar.
  • Serve with a slice of fresh hot pita to soak up the sauce and enjoy!

Ingredients

  • 1/2 cup of couscous

  • 2/3 cup of dried prunes
  • 1/2 cup of mint leaves
  • 1 tablespoon of cumin seeds 
  • 1/2 cup of olive oil

  • 1 tablespoon of honey
  • 1/2 teaspoon of salt 
  • 1/8 teaspoon of chili powder
  • Black pepper to taste

Recipe

  1. Start by boiling the broth and then pour it over the couscous and cover it for 5 minutes, fluff it, and let it sit for another 2 minutes.
  2. In a dry pan, toast the cumin seeds until they’re fragrant. Pour them into a bowl with olive oil, the juice of the lemon, the honey, salt, chili powder, and black pepper. Mix well, taste, adjust the seasonings, and leave to the side.
  3. Into a large bowl, grate the carrot, and then add in the couscous.
  4. Drain and rinse the chickpeas, add that into the bowl as well, and then cut the prunes into small pieces and add those into the bowl as well.
  5. Pour over the dressing and toss well.
  6. Chop up the mint, add that in, mix lightly, and serve!

🍟 Jicama Fries & Tahini Dip ⏲ 15 min Prep Time | Serves 2 It’s FRY-day so y’all know what that means 🥳 My first Friday off 🙌🏼 Definitely can dig this 9/80 schedule. So this is my second time trying jicama & I love it! It’s so versatile 😋 I got a huggggee jicama in my imperfect produce box & definitely was a little intimidated but these fries turned out great! Crispy, brown, spicy 🤤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 Spicy Jicama Fries: ▫1/4 Jicama, pealed & cut into fries ▫2 tbsp Avocado Oil ▫Spices – Cayenne, Smoke Paprika, Garlic Powder, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Creamy Tahini Dip: ▫1/4 cup Tahini ▫1 small Lemon, juiced ▫1/4 cup Warm Water ▫2 cloves Garlic, minced ▫Spices – Cumin, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How To❓ ▫Use a large knife to cut your jicama. I start off by hacking off a huge chunk & then used a peeled to peel off the outer skin. Takes a bit of time but peels off easily. Slice into fries. ▫Boil a pot of water with some salt. Boil the fries for roughly 10 mins to get them a little soft. ▫Transfer to a colander & then to a mixing bowl. Add in your oil & spices. Mix evenly. ▫Heat up your air fryer to 400° for 15 mins. Cook in 2 batches (depending on the size of your fryer – you don’t want them to overlap too much). ~ Tahini hecho en casa ~ Buen día! Acá Rebe nuevamente con el delantal puesto 👩‍🍳 A pedido de la mayoría, les comparto la receta del tahini. Es super fácil de hacer  y además, es más saludable y económico que el comprado 😉 . Mi receta a cambio de tu like ❤ qué te parece? . Cuando empecé a hacer mis propias mantecas de frutos secos en casa, pensé – por qué no hacer mi propio tahini? El resultado: alucinante! . Si amás el tahini como yo que lo uso para todo, esta receta te va a encantar. Necesitás solo 1 ingrediente y un poco de paciencia! . Esta pasta cremosa hecha con semillas de sésamo es una gran fuente de calcio, vitaminas del grupo B, proteína y minerales 💪 . Con 3 tazas de semillas de sésamo sin cáscara te salen unos 400g aprox de tahini. Podés usar cualquier tipo de semillas de sésamo pero si son crudas, son más nutritivas aunque un poco más amargo. Las que mejor me funcionan a mi, son las blancas, sin cáscara y crudas. . Lo primero es tostar las semillas en una sartén, para resaltar el sabor. Hay que cuidar que no se quemen. No tienen que quedar marrones. Dejar enfriar. Procesar en un procesador o batidora potente hasta obtener una pasta cremosa. Te llevará unos 10 a 15 minutos, parando de vez en cuando para raspar los lados y bajar la pasta. Guardar en un recipiente hermético en la heladera y listo! Dura un mes o un poco más en la heladera. . Si tu procesador o batidora no son potentes, podés agregar 2 o 3 C de aceite de oliva o de sésamo. Esto puede ayudar a lograr una textura más suave pero altera un poco el sabor. . Disfrutalo en tu hummus, en recetas saladas, como dressing para tus ensaladas, en tus sándwiches, como espesante en tus sopas crema 🥰 va genial con todo! .   1. Start by finely mincing or microplaning a garlic clove.
  2. To a bowl, add in the raw tahini. Add in lemon juice just a squeeze or so at a time until the paste starts to thin out a bit.
  3. After you add the lemon, add just a few drops of water to thin it out to your liking and to balance the acidity of the lemon.
  4. Add in the garlic, along with salt to your taste, as well as a pinch of cumin.
  5. Mix everything together, taste for seasoning and acidity level, and you’re done!

Just be mindful that if you do thin it out too much, tahini will thicken as it sits, so you don’t have to worry much.

To use the tahini, you can put it right onto salads as a dressing, over roasted or grilled vegetables, or even just as a dip for veggies or pita chips!

  1. Start by finely mincing or microplaning a garlic clove.
  2. To a bowl, add in the raw tahini. Add in lemon juice just a squeeze or so at a time until the paste starts to thin out a bit.
  3. After you add the lemon, add just a few drops of water to thin it out to your liking and to balance the acidity of the lemon.
  4. Add in the garlic, along with salt to your taste, as well as a pinch of cumin.
  5. Mix everything together, taste for seasoning and acidity level, and you’re done!

Just be mindful that if you do thin it out too much, tahini will thicken as it sits, so you don’t have to worry much.

To use the tahini, you can put it right onto salads as a dressing, over roasted or grilled vegetables, or even just as a dip for veggies or pita chips!
