Pea soup is so delicious and full of nutrients. Start by sauteeing onions and garlic until the onions are translucent. Add in fresh or frozen peas, along with vegetable stock. Bring the soup up to a boil and then to a simmer for about 15 minutes. Add in fresh mint leaves and then use an immersion blender to blend the soup together. Serve with more fresh mint on top and you have an awesome vegan dish!
