Peas and mint are an amazing combination. This time old tradition in English cooking stems from mushy peas which are often flavored with mint. However, there are so many other ways to combine these two flavors that are bound to excite.

Pea Soup

Pea soup is so delicious and full of nutrients. Start by sauteeing onions and garlic until the onions are translucent. Add in fresh or frozen peas, along with vegetable stock. Bring the soup up to a boil and then to a simmer for about 15 minutes. Add in fresh mint leaves and then use an immersion blender to blend the soup together. Serve with more fresh mint on top and you have an awesome vegan dish!

Pea Salad

Fresh peas in a salad really take a meal over the top. Start with fresh peas if they are available for this dish. Add thinly sliced radishes, cubes of feta cheese, and grilled apricots or nectarines. The pepperiness of the radishes gets evenly balanced out by the sweetness of the fruit and the sweetness in the peas, making it a great addition. Top with a simple vinaigrette and loads of fresh mint and you have a salad unlike any other.
