Asparagus is a delicious and often under-appreciated vegetable that comes into its peak season in the spring. We love preparing balsamic roasted asparagus, which only takes an oven, a little bit of balsamic vinegar, and some seasonings!
Peas are another spring favorite, when these little green beauties begin to burst with flavor and emerge from the ground as yet another veggie choice for us to enjoy. From wasabi peas to the classic buttery preparation, there’s so much you can do with a pea.
“What’s up, doc?” Bugs Bunny and the rest of the rabbit community are undoubtedly glad to see the start of carrot season, and humans should be too! Not only are these orange beauties a great source of nutrients like Vitamin C, but they can also be enjoyed in all kinds of creative preparations.

Pea soup is so delicious and full of nutrients. Start by sauteeing onions and garlic until the onions are translucent. Add in fresh or frozen peas, along with vegetable stock. Bring the soup up to a boil and then to a simmer for about 15 minutes. Add in fresh mint leaves and then use an immersion blender to blend the soup together. Serve with more fresh mint on top and you have an awesome vegan dish!
Fresh peas in a salad really take a meal over the top. Start with fresh peas if they are available for this dish. Add thinly sliced radishes, cubes of feta cheese, and grilled apricots or nectarines. The pepperiness of the radishes gets evenly balanced out by the sweetness of the fruit and the sweetness in the peas, making it a great addition. Top with a simple vinaigrette and loads of fresh mint and you have a salad unlike any other.
