This Spicy Potato Curry is Ideal For Vegans

If you’re not a vegan, you won’t even notice that this is a vegan-friendly meal. It has a flavor which most people will find irresistibly tempting as the spices are doing all the magic.  And, It seems that there are many ingredients here, but don’t worry this meal is simple to make!

Ingredients

  • 4 potatoes,
  • 2 tablespoons vegetable oil
  • 1 yellow onion, diced
  • 3 cloves garlic
  • 2 teaspoons ground cumin
  • 1 ½  teaspoon cayenne pepper
  • 4 teaspoons curry powder
  • 4 teaspoons garam masala
  • 1 piece fresh ginger root,
  • 2 teaspoons salt
  • 1 can diced tomatoes
  • 1 can garbanzo beans (chickpeas)
  • 1 can peas, drained
  • 1 can coconut milk

How it’s made

  1. Place potatoes in a large pot and cover with salted water. Simmer on medium-low heat and cover until tender. Now, drain and allow to steam dry for a min or two.
  2. While it’s drying, heat the vegetable oil in a large skillet over medium heat. Stir in the onion and garlic and cook until the onion is soft and translucent.
  3. Season with cumin, cayenne pepper, curry powder, garam masala, ginger, and salt. Now, add the tomatoes, garbanzo beans, peas, and potatoes, pour in the coconut milk, bring to a simmer and you’re done in 5 to 10 mins.
