The combination of mint, cucumber, and radish in this salad pair so perfectly, you’ll enjoy it every time!

Ingredients

  • 1 pound of radishes, any variety 
  • 1 1/2-2 pounds of cucumbers, the Persian or English varieties is more ideal 
  • 2 limes 
  • 2 handfuls of mint 
  •  2 tablespoons of olive oil 
  • Salt and pepper to taste

Recipe

  1. First, use a mandoline to thinly slice the radishes. If you don’t have a mandoline, use a regular knife to cut them as thinly as possible, or, slice them like regular and then cut them into quarters so they don’t overwhelm the salad. 
  2. For English or Persian cucumbers, you can just go ahead and cut them into thin slices with a knife or mandoline. But, if you’re using a regular cucumber, first cut it in half so you can scoop out the seeds before slicing them into half-moons.
  3. Toss the radishes and cucumbers into a bowl and then zest one of the limes right on top. Then, cut both the limes in half and juice them into the bowl. 
  4. Mix everything and then leave in the fridge for 20-30 minutes to marinade. 
  5. Then, add in the olive oil, salt, and pepper and mix well. 
  6. Finally, roughly chop the mint, add to the bowl, and lightly toss. 
  7. Enjoy!

Oh my!! I just made Roasted Radishes with Brown Butter, Chile & Honey from Six Seasons by @jj__mc! These were absolutely delicious and such a great side dish! These are super easy and quick and the perfect recipe for Radishes! I used my @lodgecastiron Cast Iron Pan for these and they Caramelized beautifully! I used Angico Brazilian Honey from @beeseasonalhoney and I love their Honeys because they work in beautifully in my Baking and Cooking! I also used @pasolivo Garlic Olive Oil to start the browning process! I finished them with @jacobsensaltco Sea Salt and these were the perfect ingredients for this recipe! I didn’t use the tops because they were a little too wilty, but next time I will use them! Also favorite products rounding out this photo, @murlifestyle and this beautiful Blush Flour Sack Towel by @indigo_designerie! Radishes are special little root vegetables that can be transformed in so many ways. The peppery taste comes in a small package but still pack a punch none the less. One way to really bring them to life is to roast them, which allow the sugars inside them to caramelize and to bring a slightly sweeter taste to them. Put them in conjunction with the other ingredients in this salad and you have something really special to put on the dinner table tonight.

Instructions

  1. Cut the radishes in half, and if they still have their greens on them, cut them down so only about an inch is left.
  2. Spread them on baking sheets and drizzle over olive oil and salt.
  3. Roast them until tender, about 15 minutes.
  4. On a platter or in a bowl, toss together fresh or defrosted peas, mint, and cubed feta cheese.
  5. Pour the roasted radishes into the vessel.
  6. To make the vinaigrette for the salad, combine lemon juice and lemon zest, olive oil, dijon mustard, honey, salt and pepper in a bowl. Whisk everything together to create a creamy dressing.
  7. Pour the dressing all over the vegetables, toss, and add more fresh mint leaves the top.
  8. Enjoy!
