Taco bowls are a great alternative to regular tacos or burritos if you want something that has all those classic Tex-Mex flavors in a different kind of vehicle.

These taco bowls take regular flour tortillas and turn them into something so cool and beautiful looking, and the best part is you can get your kids to make them with you! All you need is a muffin tray to make these, so try them out the next time your friends or family want to have taco Tuesday.

Ingredients

  • Flour tortillas, 1 per person
  • Cooking spray or olive oil

Recipe

  1. First, start by preheating the oven to 375 F.
  2. Flip your muffin trays upside down so the openings are facing down.
  3. Spray or wipe the bottom of the cups with oil so the tortilla won’t stick.
  4. Take the tortillas and put them in a damp paper towel and heat them up in the microwave for just 10-15 seconds so they’re pliable.
  5. Lightly spray or rub some oil onto the tortillas and then place each of them in the middle of four of the cups so the tortilla forms a bowl-like shape.
  6. Bake them in the oven for 10-15 minutes until the tortilla starts to get crispy and turn golden brown.
  7. Once they’ve cooled slightly, fill them with your favorite protein and toppings!

  1. Put ground beef in a bowl and combine it with breadcrumbs and a few beaten eggs, depending on how much beef you’re using.
  2. Add in chili powder, cumin, garlic powder, and onion powder.
  3. Chop up some parsley and cilantro and add that to the bowl as well.
  4. Finally, mix everything together with your hands to make sure everything gets incorporated well.
  5. Then, take a small bit of the mix, and put a piece of cheese or a cheese cube in the middle of it and form a ball around it.
  6. When all the meatballs have been made, put them in the freezer for 15 minutes to firm up.
  7. Heat up some oil in a pan and put a layer of the meatballs in the pan. Cook on each side until they’re nice and brown.

Refried beans are such a great dish to make because they can be made as vegan so easily while maintaining all the flavor that you love. Refried beans can be used as a dip, as a side dish, or even as the star in tacos, burritos, and more. It comes together in just about 20 minutes and you will be in love with recipe as soon as you try it.

Recipe

  1. Finely chop half an onion and saute it over medium heat with olive oil or vegan butter.
  2. While the onion cooks, drain and rinse two cans of pinto beans and leave to the side. You can also use one can of pinto beans and one can of white beans.
  3. Dice two cloves of garlic and add them to the pot along with chili powder and cumin. Allow everything to cook for a minute or less.
  4. Add in the beans cook for 5 minutes until the flavors meld together.
  5. Reduce the heat to lower and use a potato masher or a fork to smash the beans so that it is mostly smooth but still has a few chunks of whole beans.
  6. Turn off the heat, add in cilantro and a squeeze of lime juice and serve with any type of Latin-inspired dish.

Enchiladas are super delicious and filling. Although they are normally made with meat, you can make them vegan so easily! Check out this recipe and you won’t be sorry you did.

Enchilada Sauce

  1. Blend a can of whole peeled tomatoes with a whole clove of garlic, chili powder, coriander, cumin powder, smoked paprika, chili flakes, and a pinch of salt.
  2. Pour into a pot and cook on the stove for about 20 minutes to get the tin flavor out.

Enchilada Filling

  1. Pour any type of lentils into a pot with about 3 times as much water as lentils. Season with chili powder, cumin, paprika, garlic powder, and salt. Cook until all the water is absorbed.
  2. In another pan, sautee mushrooms and any type of green you have on hand like kale or spinach.
  3. Scoop some of the veggies and some of the lentils into a flour or corn tortilla and roll them up.

Assembly

  1. Put down enough sauce to cover the bottom of your baking dish.
  2. Arrange the tortillas so they are all lined up next to each other.
  3. Pour more sauce over the top of them.
  4. Bake in the oven at 350F for 20 minutes.
  5. Serve with vegan sour cream or guacamole on top!
