Have you seen a strange-looking, ultra-thin ice cream in a cone or a cup near you recently?

If so, what you probably saw was an example of one of the hottest food trends sweeping the world right now: rolled ice cream. What you might not know is how this dessert got its start and just how new it is!

Let’s go back to Thailand in 2009. In the streets of Bangkok and other cities around the Southeast Asian country, street food vendors have started to experiment with a new dessert that they call ไอติมผัด. It consists of taking a dairy base, spreading it on top of an ultra-cold surface, and then using a sharp edge spatula to roll it up into a thin, ice cream-like dessert.

In 2015, this dessert started to move into the United States and elsewhere. Stores around the planet started to take advantage of this Thai creation, implementing new flavors and twists on the rolled ice cream trend.

After scraping the thin rolls into a cup or a cone, rolled ice cream vendors have the ability to make true art with their creations! Roses and flowers are some of the most common shapes formed by the rolled ice cream which is served to consumers.

This Thai curry soup is just what you want to have at the end of a busy day because it’s hearty, complex in flavors, but takes almost no time to throw together. If you have 15 minutes to spare, you can make this soup with no problem at all.

Recipe

  1. First, start off by cutting up a block of tofu into squares. Heat up some vegetable oil in a pan and start searing the tofu on each side so they get nice and crispy.
  2. In a pot, heat up some oil and mince three cloves of garlic and micro-plane or mince about a 1-inch piece of fresh ginger. Put them into the oil to cook for just 2-3 minutes.
  3. To the pot, add 3 tablespoons of curry paste and cook for 1 minute.
  4. Add 1 can of coconut milk, 2 1/2 cups of broth, 2 tablespoons of soy sauce, and 2 teaspoons of sambal chili sauce if you have it.
  5. Roughly chop red pepper and then add it to the soup and cover partially.
  6. Once the tofu is done cooking, turn off the heat and leave it to the side.
  7. Then, to the soup, add in some chopped bok choy and whatever kind of noodles you have on hand, and cook for about 3 minutes, or however long it says on the package.
  8. Add the tofu into the soup, garnish with herbs, and enjoy!

A lot of Thai food starts with a base of curry paste. It is made in a mortar and pestle from ingredients like chili peppers, lemon grass, and other aromatics. It provides a strong flavor base to any Thai curry, sauce, or soup, and is one of the healthiest ways to impart flavor, as it does not use any fat or processed food. Making it yourself at home is easy if you have the right ingredients, and it is really worthwhile.

Recipe

  1. Start the paste by soaking 10 dried chillis in hot water or using 4 fresh red chilis.
  2. In a pan without oil, toast 1 teaspoon of cumin seeds, 2 teaspoons of coriander seeds and 1/2 teaspoon of peppercorns for a couple of minutes.
  3. After that, put them in a mortar and pestle and start crushing them into a powder.
  4. Add in the chili to the mix, along with a 1/4 inch piece of galangal or ginger, 1 stalk of lemongrass roughly chopped, 1/4 the rind of a kefir lime or 3 kefir lime leaves, 6 cilantro stems without any leaves, 2 shallots roughly chopped, 4 cloves of garlic, and a pinch of salt.
  5. Crush and mix the ingredients together until they’ve all come together. It can take some time, but it’s a good workout and you’ll end up with an amazing curry paste.
