Beans and pulses are incredibly good for us, and what’s better, they’re cheap and tasty too! This bean stew uses plenty of onion and garlic plus a few herbs and spices to create some rich, satisfying flavors in under forty minutes. It’s ideal to serve alongside fluffy white rice, or you can make or buy corn tortillas. Soured cream and avocado on the side will only improve things, and don’t forget plenty of grated cheese on top of your beans!

Ingredients (to serve 4):

  • 2 cans of black beans
  • 2 cups of tomato passata
  • 1 white onion
  • 5 cloves of garlic
  • 2 tablespoons of sunflower oil
  • 1 teaspoon of smoked paprika
  • 1 tablespoon of cocoa powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1 vegetable stock cube
  • Water, to loosen the sauce

Instructions:

  1. Finely slice the onion and dice the garlic.
  2. Heat the oil in a large pan.
  3. Add the onion and garlic, stirring regularly for 5 – 10 minutes, until the onion starts to soften.
  4. Add all of the dried herbs and spices, plus a splash of water if the onion is starting to stick.
  5. Crumble the stock cube into the mix and stir well.
  6. Using your hands or a masher, crush about half of the beans so that they are lightly mashed.
  7. Add the mashed and whole beans to the onions, plus a little water to loosen if needed.
  8. After 5 minutes, add the tomato passata. Add more water to loosen to a thin consistency, and then simmer for 15 – 20 minutes, until the liquid has cooked off and you have a thick stew.
  9. Serve alongside the rice or tortillas.

Ingredients

  • 14 oz. extra-firm tofu
  • 2 scallions
  • 2 small heads of broccoli
  • 1 piece of peeled ginger
  • salt
  • toasted sesame seeds
  • toasted sesame oil
  • 2 garlic cloves
  • 3/4 cup vegetable broth
  • 1/4 cup pure maple syrup
  • 1/2 cup soy sauce
  • 1 tablespoon plus 1/3 cup cornstarch
  • 4 tablespoons neutral oil

Instructions

  1. Preheat oven to 425°. Thinly slice scallions and separate green and white parts while also chopping up broccoli heads into smaller chunks. Place white scallion parts in a large bowl along with grated ginger and garlic. Add broth, soy sauce, chilli crisp, vinegar, sesame oil, and 1 tablespoon of cornstarch to the mix and whisk until combined.
  2. Break the tofu into 1-inch pieces if not already broken up. Toss the tofu pieces into a separate large bowl and add 1/2 teaspoon salt. Drizzle tofu with 1 tablespoon of neutral oil and toss the tofu in order to ensure that all pieces are evenly coated.
  3. Spread 2 teaspoons of neutral oil on a parchment-lined baking sheet. Place tofu on the sheet and insert into the oven, baking for about 25 minutes, until light brown and crisp in appearance.
  4. About halfway through cooking the tofu, heat the remaining neutral oil in a large skillet over medium heat. Throw in the broccoli and season with salt. Toss the broccoli to coat it thoroughly in oil. Cook for 4 to 5 minutes until broccoli starts to char.
  5. Keep the sauce cooking, whisking it to reincorporate the cornstarch.
  6. Finally, toss the tofu and broccoli into the skillet and coat with sauce.
  7. Top with green scallion parts and sesame seeds and serve with rice.

A Beef Wellington is a traditional British dish that incorporates a good cut of meat with puff pastry and gravy. This recipe incorporates vegan haggis and mushrooms to serve as a vegetarian alternative that will be the centerpiece of any Christmas roast this winter. Here’s how to make it.

Ingredients

  • 1 Macsween’s vegan haggis
  • 8 ounces of mushrooms
  • 1 white onion
  • 4 cloves of garlic
  • 15 ounces of puff pastry
  • 1 large egg
  • Salt
  • 1 large knob of butter

Instructions

  1. Chop up your onions into small slices and fry in your butter. After 5-10 minutes, add your very finely sliced mushrooms and cook for a further 5-10 minutes. At this point, add your finely chopped garlic.
  2. Pierce your haggis and pour its contents into the pan. Fry it with your mushrooms, garlic and onions until heated through.
  3. Roll your haggis and vegetable mix up into a tube using clingfilm. Leave in a fridge overnight if you can.
  4. The next day, once your haggis and vegetable mix has set, unwrap it from the clingfilm and roll it up into a cylinder in your puff pastry. Wrap the pastry around it at both ends so it doesn’t leak out. Score it with a knife, and use a beaten egg to wash the pastry with. Put in the oven at a medium-high temperature for at least 40 minutes. Serve with gravy and potatoes and anything else you fancy!

  • 1 teaspoon of dried oregano

  • 1 vegetable stock cube
  • Water, to loosen the sauce

Instructions:

  1. Finely slice the onion and dice the garlic.
  2. Heat the oil in a large pan.
  3. Add the onion and garlic, stirring regularly for 5 – 10 minutes, until the onion starts to soften.
  4. Add all of the dried herbs and spices, plus a splash of water if the onion is starting to stick.
  5. Crumble the stock cube into the mix and stir well.
  6. Using your hands or a masher, crush about half of the beans so that they are lightly mashed.
  7. Add the mashed and whole beans to the onions, plus a little water to loosen if needed.
  8. After 5 minutes, add the tomato passata. Add more water to loosen to a thin consistency, and then simmer for 15 – 20 minutes, until the liquid has cooked off and you have a thick stew.
  9. Serve alongside the rice or tortillas.

Here is your guide to whipping up a scrumptious sesame tofu and broccoli dish.

Ingredients

  • 14 oz. extra-firm tofu
  • 2 scallions
  • 2 small heads of broccoli
  • 1 piece of peeled ginger
  • salt
  • toasted sesame seeds
  • toasted sesame oil
  • 2 garlic cloves
  • 3/4 cup vegetable broth
  • 1/4 cup pure maple syrup
  • 1/2 cup soy sauce
  • 1 tablespoon plus 1/3 cup cornstarch
  • 4 tablespoons neutral oil

Instructions

  1. Preheat oven to 425°. Thinly slice scallions and separate green and white parts while also chopping up broccoli heads into smaller chunks. Place white scallion parts in a large bowl along with grated ginger and garlic. Add broth, soy sauce, chilli crisp, vinegar, sesame oil, and 1 tablespoon of cornstarch to the mix and whisk until combined.
  2. Break the tofu into 1-inch pieces if not already broken up. Toss the tofu pieces into a separate large bowl and add 1/2 teaspoon salt. Drizzle tofu with 1 tablespoon of neutral oil and toss the tofu in order to ensure that all pieces are evenly coated.
  3. Spread 2 teaspoons of neutral oil on a parchment-lined baking sheet. Place tofu on the sheet and insert into the oven, baking for about 25 minutes, until light brown and crisp in appearance.
  4. About halfway through cooking the tofu, heat the remaining neutral oil in a large skillet over medium heat. Throw in the broccoli and season with salt. Toss the broccoli to coat it thoroughly in oil. Cook for 4 to 5 minutes until broccoli starts to char.
  5. Keep the sauce cooking, whisking it to reincorporate the cornstarch.
  6. Finally, toss the tofu and broccoli into the skillet and coat with sauce.
  7. Top with green scallion parts and sesame seeds and serve with rice.

A Beef Wellington is a traditional British dish that incorporates a good cut of meat with puff pastry and gravy. This recipe incorporates vegan haggis and mushrooms to serve as a vegetarian alternative that will be the centerpiece of any Christmas roast this winter. Here’s how to make it.

Ingredients

  • 1 Macsween’s vegan haggis
  • 8 ounces of mushrooms
  • 1 white onion
  • 4 cloves of garlic
  • 15 ounces of puff pastry
  • 1 large egg
  • Salt
  • 1 large knob of butter

Instructions

  1. Chop up your onions into small slices and fry in your butter. After 5-10 minutes, add your very finely sliced mushrooms and cook for a further 5-10 minutes. At this point, add your finely chopped garlic.
  2. Pierce your haggis and pour its contents into the pan. Fry it with your mushrooms, garlic and onions until heated through.
  3. Roll your haggis and vegetable mix up into a tube using clingfilm. Leave in a fridge overnight if you can.
  4. The next day, once your haggis and vegetable mix has set, unwrap it from the clingfilm and roll it up into a cylinder in your puff pastry. Wrap the pastry around it at both ends so it doesn’t leak out. Score it with a knife, and use a beaten egg to wash the pastry with. Put in the oven at a medium-high temperature for at least 40 minutes. Serve with gravy and potatoes and anything else you fancy!
