Chicken Pot Pie is a classic dish, and it makes a hearty meal when you need to feed a family. But sometimes it might get a little monotonous, or you might not have chicken in the house. Luckily there are lots of other pot pies you can try out.

Herring Pot Pie

If you’ve ever seen the film Kiki’s Delivery Service, you probably remember the herring pot pie that Kiki must deliver in the rain against all odds. The pie looks delicious even animated, and luckily a few people have created recipes so that you can eat it in real life. Some recipes use pumpkin, while others require a mash-potato base. Either way, it’s delicious and quite a departure from the classic chicken.

Vegan Pot Pie

Even though chicken pot pie is named for its meat, its main characteristics are really that the ingredients be cooked in a broth until thick and then covered in a crust. That means it’s not too hard to turn this vegan by using vegetable stock, seitan, or whatever you like instead of chicken, and lots of veggies.

Guinness Beef Pot Pie

In an ultra-rich, ultra-original take on the classic dish, this is essentially beer-based beef stew covered with a crust. It’s also got mushrooms and other veggies that soak up all that beefy goodness.

The stormier it is outside, the deeper the crave, so we thought we’d gather some recipes to help you make sure you have ingredients for stew at home when the weather starts turning. Beef and Guinness Stew

This is a traditional Irish stew, straight from the emerald island, a place that knows what it’s like to cook in rainy weather. If you don’t have Guinness available, any stout would do, but make sure to get beef suitable for stew: lean, trimmed, and cubed.

Italian Short Rib Stew

While we don’t think of comfort food as healthy or diet-appropriate, this recipe fits nicely as part of a Mediterranean Diet.

Vegan Stew

For many people, it’s hard to imagine a satisfying and comforting soup without any beef or animal products, but vegetables can be transformed into a delicious stew without much hassle. Make sure you have a variety of mushrooms and beans, and some (vegan) red wine, and you’re well on your way!

If you loaded yourself up with unhealthy food these last couple months and want to get your body back on track, this green soup is for you. It has so much goodness packed into one pot and it is so satisfying.

Instructions

  1. Heat up 2 tablespoons of oil in a pan on high heat and add 2 sliced onions with 1/4 teaspoon of salt.
  2. Once the onions are starting to brown, about 5 minutes, lower the heat to low, throw in 2 tablespoons of water and cover. Stir the onions occasionally and cook them for about 30 minutes or until they turn a caramel color.
  3. In a pot, bring 3 cups of water to a boil with 3/4 teaspoon of salt and 1/4 cup of arborio rice.
  4. Reduce to a simmer, and cover for 15 minutes.
  5. Take the leaves off of a bunch of swiss chard and chop them up along with 12 ounces of spinach.
  6. After the rice has cooked, add all the greens into the same pot and cook for 10 more minutes.
  7. Then, add in the caramelized onions along with 4 cups of stock, a pinch of chili pepper or cayenne, and cook for just a couple more minutes.
  8. Blend with an immersion blender or blender, add in the juice of half a lemon and serve!
