So, you want to make kimchi at home? Fantastic decision! There’s something truly special about transforming simple ingredients into a complex, gut-friendly masterpiece. Don’t worry if you’ve never fermented anything in your life. Here’s a step-by-step guide to help you out. 

Ingredients:

  • 1 large Napa cabbage (about 2 pounds)
  • 1/4 cup sea salt or kosher salt
  • Water (enough to cover the cabbage)

For the Paste:

  • 1 tablespoon grated garlic (about 5-6 cloves)
  • 1 teaspoon grated ginger
  • 1 teaspoon sugar
  • 2-3 tablespoons water
  • 2 tablespoons fish sauce (optional for vegetarians, can be replaced with soy sauce)
  • 1-5 tablespoons Korean red pepper flakes (gochugaru) depending on your spice preference
  • 1 daikon radish, peeled and cut into matchsticks
  • 4 green onions, trimmed and cut into 1-inch pieces

Instructions:

  5. Ferment at room temperature for 1-5 days, then refrigerate.

Sushi sandwiches, also known as “Onigirazu,” are a fun twist on traditional sushi rolls and sandwiches. Combining the best of both worlds, these sandwiches have all your favorite sushi flavors but are easier to make than a traditional handroll. Let’s jump in. 

Ingredients

  • Sushi rice (cooked and seasoned with rice vinegar, sugar, and salt)
  • Nori sheets (dried seaweed)
  • Fillings of your choice (examples: cooked salmon, tuna, crab meat, avocado, cucumber, carrot)
  • Soy sauce, wasabi, and pickled ginger for serving

Instructions

  1. Cooking the sushi rice according to package instructions. Once cooked, season it with a mixture of rice vinegar, sugar, and salt.

  3. Wet your hands and take a handful of sushi rice. Place it in the center of the nori sheet and gently spread it out.

Giouvetsi

Greeks love their lamb. The protein is rich in iron, zinc, and B12, and can promote muscle growth while preventing anemia. Although lamb features in dishes like souvlaki to kleftiko, a classic way to enjoy it is as giouvetsi—baked in a clay pot with orzo.

Yemista

Fresh produce is a large part of the Greek diet. This dish can be made with either tomatoes or bell peppers and is far less complicated than it sounds. Simply hollow out the veggies and fill with herbed rice or minced meat (or both!) and then place in the oven.

Tzatziki

Sushi sandwiches, also known as “Onigirazu,” are a fun twist on traditional sushi rolls and sandwiches. Combining the best of both worlds, these sandwiches have all your favorite sushi flavors but are easier to make than a traditional handroll. Let’s jump in. 

Ingredients

  • Sushi rice (cooked and seasoned with rice vinegar, sugar, and salt)
  • Nori sheets (dried seaweed)
  • Fillings of your choice (examples: cooked salmon, tuna, crab meat, avocado, cucumber, carrot)
  • Soy sauce, wasabi, and pickled ginger for serving

Instructions

  1. Cooking the sushi rice according to package instructions. Once cooked, season it with a mixture of rice vinegar, sugar, and salt. 
  2. Place a nori sheet on a clean, dry surface. 
  3. Wet your hands and take a handful of sushi rice. Place it in the center of the nori sheet and gently spread it out.
  4. Place your filling in the center of the rice. 
  5. Start by folding the two opposite corners of the nori towards the center, ensuring they overlap slightly. Then, fold the remaining two corners towards the center to form a square or rectangular package.
  6. Once your sushi sandwich is neatly wrapped, use a sharp, wet knife to cut it in half. 
  7. Serve your sushi sandwich with soy sauce, wasabi, and pickled ginger.
