]]>For these iced biscuits you need:
1 egg, 200 g golden caster sugar
400 g plain flour
200 g unsalted softened butter
1/2 teaspoon vanilla extract or 1 zested lemon
For the icing decoration you need food coloring, and fondant icing sugar combined with water.
Start by setting the oven to 350 F degrees.
Whisk the butter until it has a creamy consistency. The best idea is to use an electric mixer.
Then, add the sugar, followed by the egg and vanilla. When you’re done with these, you can include the flour. Knead everything together.
Divide the biscuit dough in six parts and get the shape cutters. From each dough get the biscuits with the cutters.
Place them on a baking sheet and leave them in the oven for 7 to 10 minutes.
Take the biscuits out of the oven and you should leave them to cool down a little bit.
Prepare the icing in your favorite colors and you can start decorating the cookies.
It’s really easy to use this recipe for different holidays, by using different shape cutters and colors.

]]>Unlike pastries, you don’t need the butter to be freezing cold. However, you do want to cut it up into cubes and stick it into the freezer for at least 15-20 minutes. This will give your biscuits that flakey texture.
To ensure you get nice layers, once you’ve rolled out your dough, cut the dough into large pieces and stack them one on top of the other. Then, roll the stack out and you can go ahead and cut out the biscuits. By stacking the dough you will definitely get a flakey biscuit.
When you take your biscuit cutter or glass to stamp out the biscuits, do as many as you can to try and leave as little dough scraps as possible. You can’t re-roll the dough scraps to make more dough, but you can carefully take the scraps and put them inside the circle cut-outs and stamp out more to have funkier shaped biscuits.
