]]>For Christmas Eve, Selena and her chef friends decided to cook up a seafood medley. Chef Eric decided that it would be perfect to add some Southern flavor to the meal, with the pair cooking up Shrimp and Banana grits. Black pepper roast beef and gravy were also on the menu.
Together with Chef Claudette, Selena cooked up a traditional Mexican holiday meal for Christmas lunch. Mains included roast ham, salsa matcha, Tamales, Charred Poblano rice, and salad.
From homemade pasta to her lobster dish, Selena loves cooking up homemade meals for the holidays, whether her own recipes or something she learned from the chefs. “Welcoming someone into my home and getting to cook their recipes is really fun, and so is having my friends try it,” Selena remarked.

]]>Whisk together flour, baking powder, and salt in a large bowl. In a separate bowl, beat butter and sugar together with a hand mixer until well blended. Then, add egg, milk, and peppermint extract to the mix and beat until everything is blended together. Remove half the dough from the bowl, shape it into a disc, and wrap it with plastic. Cover the remaining dough with red food coloring. Then, shape the red dough into a disc and place both discs in the fridge for at least two hours.
Remove the two discs from the fridge and divide each one into 24 pieces. Roll each piece into a 6-inch long rope and twist one red and one white piece together, forming a cane. Once you’re finished rolling each cane, place them on a baking sheet and sprinkle with sanding sugar. Finally, preheat the oven to 350°F and bake the cookies until lightly golden in color. Allow sufficient time to cool before serving.
