  • 4 fillets of white fish (such as cod, haddock, or pollock)
  • 1 cup of all-purpose flour
  • 1 teaspoon baking powder

  • 1 cup of beer (lager or ale)
  • Vegetable oil (for frying)
  • 4 large potatoes, peeled and cut into thick fries

Instructions:

  1. Start by preparing the chips (fries). Rinse the potato fries under cold water to remove excess starch. Pat them dry with paper towels.
  2. Heat vegetable oil in a deep fryer or large pot to 325°F (160°C). Carefully add the potato fries in batches, ensuring not to overcrowd the fryer or pot. Fry for about 5-6 minutes, or until they are soft but not yet browned. Remove the fries from the oil and drain them on paper towels. Increase the oil temperature to 375°F (190°C).
  3. While the oil heats up for the second fry, prepare the fish batter. In a mixing bowl, whisk together the flour, baking powder, salt, and pepper. Gradually pour in the beer while whisking until a smooth batter forms. Dip each fish fillet into the batter, coating it evenly.
  4. Carefully place the battered fish fillets into the hot oil. Fry for 5-7 minutes, or until the batter is golden brown and the fish is cooked through. Use a slotted spoon to remove the fish from the oil and drain them on paper towels.
  5. Return the par-cooked potato fries to the hot oil and fry for an additional 3-4 minutes, or until they are golden brown and crispy. Remove them from the oil and drain them on paper towels.
  6. Season the fish and chips with salt to taste. Serve the homemade fish and chips hot, accompanied by your favorite condiments such as tartar sauce, malt vinegar, or lemon wedges. It will be made even better with another British classic; mushy peas!

Fish and potatoes are a great combo that packs in lots of your protein with a healthy carb. It’s also very delicious and can be enjoyed with a wide variety of vegetables and sauces. Here is a super easy fish and potato dish that you’ll love.

Ingredients

  • 1 pound of new potatoes
  • 2 fillets of sea bass
  • Fresh parsley
  • 1/2 cup of butter
  • 8 ounces of cavolo nero
  • Juice of 1 lemon
  • Salt
  • Black pepper

Instructions

  1. Chop any eyes or nasty bits off of your potatoes, but keep the skins on if you are using new potatoes as they are delicious. Boil in a pan of heavily salted water for about 15 minutes, depending on how big they are.
  2. In a separate pan of boiling water, boil your cavolo nero in small strips for about 5 minutes and drain.
  3. Fry your sea bass in a bit of butter, cooking for about 3 minutes on each side. Add salt, black pepper and a squeeze of lemon as they cook.
  4. Place your potatoes on a plate and serve with your cavolo nero and sea bass. You can chop up your fresh parsley and add it to your fish as a garnish. Add a pinch of salt and black pepper according to your preference and a dash of lemon juice. Enjoy!

As it is uncooked, it is crucial to get fish that is as fresh as possible. Here is how to check if your swimmer is sashimi-grade. 

Brightness

When fish is fresh, it’s vibrant. Tuna is a deep red, while salmon holds true to “salmon pink”. Look for pieces that have a bright color and no discoloration. Avoid those with brown or gray marks.

Texture

Sashimi-grade fish is the highest quality you can get. It should be smooth and slightly firm when touched, but without a fibrous or mushy consistency. It should feel slightly firm to the touch. You want a melt-in-your-mouth sensation when you bite into it.  

Smell

You know that strong, fishy smell that we associate with seafood? Yeah, that’s a bad thing. Truly fresh fish doesn’t smell fishy; it smells like the ocean.

Freezing

Some species of fish need to be frozen at low temperatures to kill off any potential parasites that may be lurking about. Overall, though, you want to use fish that has not been properly frozen when making something like poké or sushi that requires eating it raw.

Salmon is a dish so versatile that it is equally as good for a dinner party as it is for supper on a Tuesday night. There are many ways to prepare salmon—from glazing it with teriyaki sauce to baking it with lemon butter—but there are just as many ways to mess it up. To prevent said travesty, here are some tricks to keep you swimming upstream. 

Keep Cool

With some proteins, a searing hot pan is needed. Salmon, however, is not one of those. Cooking the fish on too high a heat will release a protein in the form of a white goo, so it’s best to keep the stove on medium-low during the cooking process.

Crispy and Crunchy

Some salmon pieces come skinless, but on the chance that there’s skin on your fish, don’t let it go to waste. Begin by placing the salmon skin-side down in the pan to get it lightly browned and crispy, then flip it over and cook the other side. You’ll forget all about chicken skin after tasting how good this is. 

Test the Temp

After all the effort of making salmon, the last thing you want is for it to be overcooked. Aim for medium to medium-rare, with the fish still pink in the center. A meat thermometer can be used to test how done the salmon is, with a temperature between 135-145°F being ideal. After removing it from the pan, allow the fish to rest for a few minutes, just as you would a steak.

Have you just bought a filet of salmon and you aren’t quite sure what the best method for preparing it is? While salmon might seem like an intimidating fish to cook, there’s no need to worry because there are plenty of preparations that make this fish taste great.

Here are the three best ways to prepare salmon.

Pan-frying

Pan-frying salmon is one of my favorite ways to prepare a filet of this fish. I recommend adding a little bit of olive oil to a cast-iron pan, during your stove on medium heat, and cooking the fish until it is thoroughly done on both sides and in the middle, about 7-8 minutes total.

Baking

Baking is another easy way to prepare salmon, requiring very little effort and time. Depending on the size of your fillet, only about 8-10 minutes in an oven that has been pre-heated to 400 degrees Fahrenheit should do the trick.

Grilling

Are you lucky enough to own a grill? This is a great way to prepare salmon in a unique and exciting way. A charcoal grill can be a great solution, but if you have hickory chips or mesquite chips, this is a great way to leave the wood’s character on the salmon’s flavor.

Fish molee is also known as fish curry and is a very popular dish in Malaysia, India, Portugal.

Ingredients

  • 1/2 kg fish (pompano, tilapia, salmon, king fish)
  • 1 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • salt
  • 1 teaspoon pepper powder

For the fish molee you need

  • 1 cup thin coconut milk
  • 1/2-inch ginger piece, minced
  • 1 teaspoon pepper
  • 1 cup thick coconut milk
  • 1 sliced tomato
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • 3 to 4 green chilies
  • 2 finely chopped garlic cloves
  • 1 sprigs curry leaves
  • coconut oil
  • 1 sliced medium onion
  • salt

Instructions

  • Fill a bowl with salt, lemon juice, turmeric powder, and pepper. Cut the fish into pieces and place it in the bowl for 15 to 20 minutes.
  • Fry the fish in a pan with oil until it’s done. Place it on the side.
  • Get a second pan and heat some oil. Combine the sliced ginger, green chilies, curry leaves, and garlic. Cook for 1 minute.
  • Pour in the onions and continue cooking until they become translucent.
  • Include the pepper powder, thin coconut milk, and turmeric powder. Cover the pan with a lid and let it boil for 5 to 6 minutes.
  • Once you notice that the oil is separating lower the heat and pour the lemon juice.
  • Combine this mix with the fish and let it boil once again. Pour in the thick coconut milk and continue cooking for 2 more minutes.
  • Don’t let the fish molee to boil. Finish off by adding more curry leaves and the tomatoes.

Ingredients:

  • 1 lb fresh cod
  • salt
  • ground black pepper
  • 2 large eggs
  • 3/4 cup breadcrumbs
  • 1/2 cup flour
  • 1/4 cup grated Pecorino Romano
  • 1 teaspoon seafood seasoning
  • tartar sauce
  • lemon wedges

Instructions:

  1. Cut the cod into strips, about 3 inches long and 1/2 inch thick. Season with salt and pepper.
  2. Whisk flour, 1/2 teaspoon salt, and pepper together in a shallow bowl.
  3. In a second bowl, whisk together eggs and a pinch of salt.
  4. In a third bowl, whisk together breadcrumbs, Pecorino Romano, and seafood seasoning.
  5. Dip each piece of fish into the bowl of flour, shaking off any excess, before dipping in the egg mixture. Then, submerge into breadcrumb mixture, ensuring that each piece of cod is fully coated.

  • 4 fillets of white fish (such as cod, haddock, or pollock)
  • 1 cup of all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup of beer (lager or ale)
  • Vegetable oil (for frying)
  • 4 large potatoes, peeled and cut into thick fries
  • Vegetable oil (for frying)
  • Salt

Instructions:

  1. Start by preparing the chips (fries). Rinse the potato fries under cold water to remove excess starch. Pat them dry with paper towels.
  2. Heat vegetable oil in a deep fryer or large pot to 325°F (160°C). Carefully add the potato fries in batches, ensuring not to overcrowd the fryer or pot. Fry for about 5-6 minutes, or until they are soft but not yet browned. Remove the fries from the oil and drain them on paper towels. Increase the oil temperature to 375°F (190°C).
  3. While the oil heats up for the second fry, prepare the fish batter. In a mixing bowl, whisk together the flour, baking powder, salt, and pepper. Gradually pour in the beer while whisking until a smooth batter forms. Dip each fish fillet into the batter, coating it evenly.
  4. Carefully place the battered fish fillets into the hot oil. Fry for 5-7 minutes, or until the batter is golden brown and the fish is cooked through. Use a slotted spoon to remove the fish from the oil and drain them on paper towels.
  5. Return the par-cooked potato fries to the hot oil and fry for an additional 3-4 minutes, or until they are golden brown and crispy. Remove them from the oil and drain them on paper towels.
  6. Season the fish and chips with salt to taste. Serve the homemade fish and chips hot, accompanied by your favorite condiments such as tartar sauce, malt vinegar, or lemon wedges. It will be made even better with another British classic; mushy peas!

Fish and potatoes are a great combo that packs in lots of your protein with a healthy carb. It’s also very delicious and can be enjoyed with a wide variety of vegetables and sauces. Here is a super easy fish and potato dish that you’ll love.

Ingredients

  • 1 pound of new potatoes
  • 2 fillets of sea bass
  • Fresh parsley
  • 1/2 cup of butter
  • 8 ounces of cavolo nero
  • Juice of 1 lemon
  • Salt
  • Black pepper

Instructions

  1. Chop any eyes or nasty bits off of your potatoes, but keep the skins on if you are using new potatoes as they are delicious. Boil in a pan of heavily salted water for about 15 minutes, depending on how big they are.
  2. In a separate pan of boiling water, boil your cavolo nero in small strips for about 5 minutes and drain.
  3. Fry your sea bass in a bit of butter, cooking for about 3 minutes on each side. Add salt, black pepper and a squeeze of lemon as they cook.
  4. Place your potatoes on a plate and serve with your cavolo nero and sea bass. You can chop up your fresh parsley and add it to your fish as a garnish. Add a pinch of salt and black pepper according to your preference and a dash of lemon juice. Enjoy!

As it is uncooked, it is crucial to get fish that is as fresh as possible. Here is how to check if your swimmer is sashimi-grade. 

Brightness

When fish is fresh, it’s vibrant. Tuna is a deep red, while salmon holds true to “salmon pink”. Look for pieces that have a bright color and no discoloration. Avoid those with brown or gray marks.

Texture

Sashimi-grade fish is the highest quality you can get. It should be smooth and slightly firm when touched, but without a fibrous or mushy consistency. It should feel slightly firm to the touch. You want a melt-in-your-mouth sensation when you bite into it.  

Smell

You know that strong, fishy smell that we associate with seafood? Yeah, that’s a bad thing. Truly fresh fish doesn’t smell fishy; it smells like the ocean.

Freezing

Some species of fish need to be frozen at low temperatures to kill off any potential parasites that may be lurking about. Overall, though, you want to use fish that has not been properly frozen when making something like poké or sushi that requires eating it raw.

Salmon is a dish so versatile that it is equally as good for a dinner party as it is for supper on a Tuesday night. There are many ways to prepare salmon—from glazing it with teriyaki sauce to baking it with lemon butter—but there are just as many ways to mess it up. To prevent said travesty, here are some tricks to keep you swimming upstream. 

Keep Cool

With some proteins, a searing hot pan is needed. Salmon, however, is not one of those. Cooking the fish on too high a heat will release a protein in the form of a white goo, so it’s best to keep the stove on medium-low during the cooking process.

Crispy and Crunchy

Some salmon pieces come skinless, but on the chance that there’s skin on your fish, don’t let it go to waste. Begin by placing the salmon skin-side down in the pan to get it lightly browned and crispy, then flip it over and cook the other side. You’ll forget all about chicken skin after tasting how good this is. 

Test the Temp

After all the effort of making salmon, the last thing you want is for it to be overcooked. Aim for medium to medium-rare, with the fish still pink in the center. A meat thermometer can be used to test how done the salmon is, with a temperature between 135-145°F being ideal. After removing it from the pan, allow the fish to rest for a few minutes, just as you would a steak.

Have you just bought a filet of salmon and you aren’t quite sure what the best method for preparing it is? While salmon might seem like an intimidating fish to cook, there’s no need to worry because there are plenty of preparations that make this fish taste great.

Here are the three best ways to prepare salmon.

Pan-frying

Pan-frying salmon is one of my favorite ways to prepare a filet of this fish. I recommend adding a little bit of olive oil to a cast-iron pan, during your stove on medium heat, and cooking the fish until it is thoroughly done on both sides and in the middle, about 7-8 minutes total.

Baking

Baking is another easy way to prepare salmon, requiring very little effort and time. Depending on the size of your fillet, only about 8-10 minutes in an oven that has been pre-heated to 400 degrees Fahrenheit should do the trick.

Grilling

Are you lucky enough to own a grill? This is a great way to prepare salmon in a unique and exciting way. A charcoal grill can be a great solution, but if you have hickory chips or mesquite chips, this is a great way to leave the wood’s character on the salmon’s flavor.

Fish molee is also known as fish curry and is a very popular dish in Malaysia, India, Portugal.

Ingredients

  • 1/2 kg fish (pompano, tilapia, salmon, king fish)
  • 1 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • salt
  • 1 teaspoon pepper powder

For the fish molee you need

  • 1 cup thin coconut milk
  • 1/2-inch ginger piece, minced
  • 1 teaspoon pepper
  • 1 cup thick coconut milk
  • 1 sliced tomato
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • 3 to 4 green chilies
  • 2 finely chopped garlic cloves
  • 1 sprigs curry leaves
  • coconut oil
  • 1 sliced medium onion
  • salt

Instructions

  • Fill a bowl with salt, lemon juice, turmeric powder, and pepper. Cut the fish into pieces and place it in the bowl for 15 to 20 minutes.
  • Fry the fish in a pan with oil until it’s done. Place it on the side.
  • Get a second pan and heat some oil. Combine the sliced ginger, green chilies, curry leaves, and garlic. Cook for 1 minute.
  • Pour in the onions and continue cooking until they become translucent.
  • Include the pepper powder, thin coconut milk, and turmeric powder. Cover the pan with a lid and let it boil for 5 to 6 minutes.
  • Once you notice that the oil is separating lower the heat and pour the lemon juice.
  • Combine this mix with the fish and let it boil once again. Pour in the thick coconut milk and continue cooking for 2 more minutes.
  • Don’t let the fish molee to boil. Finish off by adding more curry leaves and the tomatoes.
