Cook for 40-45 minutes, fluff with a fork and cover for 20 minutes off the heat.
Red rice is so delicious and satisfying from the bold creamy tomato taste and all the other aromatics. To make it fry rice, onions, and garlic together for a few minutes. Add broth, tomato paste, a hot pepper, and some cilantro. Cook as normal and serve with any Latin-style dish!
