Fried rice dishes are very versatile and can be a great way to get lots of vegetables in your diet as well as using up leftover rice. Here is a recipe for chicken fried rice that you can adapt as you need, and has all the protein that you need.

Ingredients

  • 6 ounces of chicken breast
  • 8 ounces of mushrooms
  • 4 cloves of garlic
  • 1 large brown onion
  • 10 ounces of tenderstem broccoli
  • Soy sauce
  • 10 ounces of basmati rice
  • 1 tablespoon of cooking oil
  • Salt
  • Black pepper

Instructions

  1. Chop up your onion into small pieces and fry on a medium heat in your oil until lightly brown. Add your mushrooms and a decent amount of salt and cook for 10 minutes.
  2. Chop up your tenderstem broccoli and cook for 5-10 minutes before adding your crushed garlic.
  3. Heat up a separate pan and cook your chicken breasts in small chunks until it is starting to brown on the outside. When it is cooked, add it into your vegetable pan.
  4. Add a generous amount of soy sauce into your pan before adding your rice that ideally has been cooked the day before. Add black pepper and salt to taste and enjoy!

Ingredients

  • Cooked rice. Brown rice is healthier but white rice is great, too ๐Ÿ™‚
  • Soy sauce
  • Sesame oil
  • Tofu
  • Vegetable oil
  • Vegetables
    • Peas
    • Carrots
    • Broccoli
    • Cauliflower
    • Onion
  • Or, alternatively, a frozen veggie mix

Directions

  • You’re going to start by cooking the tofu. Chop it up into bite-sized pieces. Heat the vegetable oil on high, add the tofu, and cook, crisping it on each side by stirring minimally.
  • As the tofu cooks, you can chop up your vegetables or defrost your frozen veggies. Either way, try to get all of your veggies into uniform, bite-sized pieces.

Fried rice salad is not the fastest dish to make, but it’s so delicious. Make it at home following these easy steps.

Ingredients:

  • 1/2 head finely shredded green cabbage
  • 1/2 cup carrots
  • 1/2 cup roughly chopped cilantro
  • 2 cups cooked white rice
  • 2 tablespoons rice vinegar
  • 1 cup green peas or shelled edamame
  • 1 tablespoon toasted sesame seeds
  • 1/2 cup sweet corn kernels
  • 1 tablespoon granulated sugar
  • 1/2 cup thinly sliced green onion
  • 1 teaspoon finely minced ginger root
  • 1 tablespoon shoyu
  • 2 tablespoons sesame oil
  • vegetable oil
  • black pepper
  • salt

Instructions:

  1. Wait for the rice to cool down, then place it on a baking sheet. Make sure that you arrange it in one layer.
  2. Cook the rice for 3 to 4 hours at 150 F degrees.
  3. When the rice is done, use a deep frying pan and heat the oil to 350 F degrees.
  4. Cook the rice for 1 minute, then place it on a paper to drain. Add salt to your taste.
  5. Mix the corn, carrots, cabbage, 1/4 cup cilantro, green peas or edamame, sesame seeds, and green onions in a salad bowl.
  6. Use a second bowl to mix the shoyu, rice vinegar, garlic, sesame oil, sugar, and ginger together.
  7. Add the dressing to the salad and add pepper and salt to your taste.
  8. Finally, include the fried rice and decorate with cilantro.
