]]>This hot drink, originally from South America, is an infusion made from the dried leaves of a plant called yerba mate. The beverage produced by these leaves is beloved in countries such as Argentina, Paraguay, Uruguay and Brazil, and has started to grow in popularity worldwide.
It can be tough to learn to make a mate the correct way, but it really isn’t that hard! So let’s go for it.
Mate gourd
A “bombilla” (a silver straw that filters)
Yerba mate
Cold water
Hot water (around 180 F), in a thermos
Start off by filling your mate cup about 2/3rds of the way full with the yerba mate leaves.
Once you’ve done this, place your palm on top of the mate gourd and begin to gently shake the leaves back and forth a few times. This will help arrange the mate leaves into a “little mountain” that will form an incline inside of the cup once upright.
When you’ve set the cup down and the “little mountain” has formed, filling one half of the cup on an incline, add the silver “bombilla” to the empty side of the gourd, leaning against the “little mountain.”
Fill about half of the empty space with cold water. This will prevent hot water from burning the leaves and producing a bitter mate.
Next, fill the rest of the mate gourd with hot water.
Allow to steep for a couple minutes, and you’re ready to start sipping!
You can keep adding hot water until the beverage loses its flavor.

You can buy dulce de leche at the store, or make it yourself at home. The easiest way to make it at home is by taking a can of condensed milk, poking two holes at the top, and putting it in a large pot. Cover the pot with water and let it simmer for 2-3 hours. Make sure the cans are always covered with water and you will have perfect dulce de leche every time!
Dulce de leche is absolutely the type of sweet that you can eat right out of the can with a spoon. But, if you are willing to be patient you can add it to the top of cakes, or make alfajores using two shortbread cookies and dulce de leche in the middle.

Queso fresco is a type of Hispanic cheese that is soft and hasn’t been left to mature at all. It’s very delicate and creamy and you’ll love it when it partially melts inside of an arepa.
Chicken is my favorite meat filling for arepas because its flavor doesn’t overwhelm the dish. Marinate the chicken in a chimichurri or red pepper sauce for maximum tastiness.
This combination might sound odd at first, but it’s actually quite traditional for arepas. The sweetness of the fried plantains and the savory character of the black beans go very well together.

The meat used in ropa vieja is also stewed with vegetables such as red bell peppers, onion, and garlic.
The end result is a warm, filling dish that is both hearty and delicious.
The traditional way to enjoy ropa vieja is with a few common Cuban side dishes. Ropa vieja is usually served and eaten with seasoned yellow rice and black beans. The ropa vieja can be combined with these ingredients to create one big mish-mash of flavor.
