]]>Make the sun-dried tomato pasta salad by using:
1 teaspoon drained capers
6 tablespoons olive oil
12 sun-dried tomatoes in oil
kosher salt
1/2 pound cherry tomatoes cut in half
2 tablespoons red wine vinegar
3/4 teaspoon freshly ground pepper
1/2 pound fresh mozzarella
1 finely chopped garlic clove
1 cup packed basil leaves
3/4 cup black olives
1/2 pound orecchiette
1 cup freshly grated Parmesan
You will need a food processor or a blender for this recipe. Fill it with the garlic, vinegar, one half of the sun-dried tomatoes, capers, pepper, and 2 teaspoons salt. Blend everything very well.
Put the pasta in pot and cook it according to the instructions. When it’s done, remove the water and mix the pasta with the sauce. Add in the mozzarella, the rest of the sun-dried tomatoes, olives, basil, and the Parmesan. Stir it and your sun-dried tomato pasta salad is ready!
