Whipping up dinner in the middle of the week can be a nice way to relax, but for many of us it begins to feel like a chore and getting a take-out instead starts to feel mighty tempting. Resist this urge, and turn to this simple, quick and easy pasta recipe instead. It’s seriously tasty and full of healthy fiber, so you’ll feel satisfied after eating this great dish.

Ingredients (to serve 2):

  • 1 cup of dried macaroni
  • 1 tin of chickpeas
  • 2 sticks of celery
  • 1 large carrot
  • 1 red onion
  • 1 vegetable stock cube
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter
  • Cheddar for grating (optional)
  • 1 teaspoon of ground black pepper

Instructions:

  1. Finely dice the onion, celery and carrot. Heat the oil in a heavy based pan and fry the vegetables for 10 minutes.
  2. Add the chickpeas and their water to the pan. Stir through and then add the vegetable stock cube.
  3. Simmer until most of the water has reduced.
  4. Stir in the macaroni, topping up with a little more water if required.
  5. Add the black pepper and cook for the length of time stipulated on the pasta packet.
  6. Once the pasta is cooked, stir through the butter and add grated cheese if desired.

Simple, hearty and full of delicious flavor, you can’t go wrong with this pasta dish.
