You Won’t Be Able to Get Enough of This Chicken and Bacon Pasta Salad

If you’re looking for a deliciously satisfying lunch, this pasta salad is perfect. The tasty chicken and bacon work well with the fresh tomatoes, sweet corn, and onion, and the tangy, creamy sauce pulls it together so well. This recipe can easily be doubled to cook for a crowd or to make lunches ahead of time.

Ingredients:

(Serves 2)

  • Pasta of your choice
  • 2 chicken breast fillets
  • 2 rashers of bacon
  • 1 small red onion
  • 8-10 cherry tomatoes
  • ⅓ cup sweet corn
  • ½ cup fresh parsley
  • Salt and pepper, to taste

For the dressing:

  • 2 tablespoons mayonnaise 
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 2 teaspoons lemon juice 
  • 2 teaspoons chopped chives

Instructions:

  1. Preheat the oven to 360℉.
  2. Brush the chicken breasts with a little oil and sprinkle with salt and pepper and place in the oven for 20-30 minutes.
  3. Meanwhile, fry the bacon rashers in a tiny bit of oil until slightly browned.
  4. Cook the pasta according to the package instructions.
  5. Place the chicken, bacon, and pasta to one side to cool down.
  6. Finely dice the red onion and quarter the tomatoes. 
  7. Make the dressing by mixing together all the ingredients until well combined.
  8. Once the chicken and bacon are cooled, chop them up into bite-sized pieces.
  9. In a large bowl, add the pasta, chicken, bacon, onion, tomatoes, and sweet corn.
  10. Add some salt and pepper if you wish, then tear the parsley leaves into the bowl, and give it a good stir.
  11. Add the dressing and mix through until everything is combined and then serve.
