As much as we enjoy burgers and dogs fresh off the grill, when it comes to summer barbecues, it’s the sides we really look forward to. There are so many fun ways to prepare fresh vegetables, and when else do we get to think of potatoes and pasta as “salads?”

Store-bought side dishes will work in a pinch, but in our experience, there are some dishes that are worth making from scratch. Preparing your own sides is also a great way to make sure that everyone’s dietary preferences are able to be met. As summer comes to an end and we get ready for the final cookouts of the season, these are the side dishes we’ll be making on repeat.

Horiatiki Pasta Salad

When most of us think of feta cheese, fresh veggies, and Kalamata olives, we refer to it as a Greek salad, but the “official” name for this combination is horiatiki. This pasta salad recipe is packed with Mediterranean flavors and is a certified crowd-pleaser at any summer gathering.

Cucumber Salad With Fresh Herbs

Getting your greens in has never been so easy and delicious. This cucumber salad by Minimalist Baker incorporates fresh dill and mint and is ready to serve in just 15 minutes. It can be made with either regular or vegan feta and is naturally gluten-free.

Roasted Radish & New Potato Salad

The prettiest salad we ever did see. This healthy take on classic potato salad features pink and purple radishes and bite-sized potatoes and is made without mayonnaise. Finish with some spring onion for even more color.
