The tangy, earthy aroma of homemade sourdough bread is enough to make anyone’s mouth water. But before you can bake that perfect loaf, you need the key ingredient: a healthy sourdough starter. Don’t be intimidated! Creating your own starter is easier than you think, and it’s a rewarding journey.

Ingredients:

  • 1/4 cup whole wheat flour
  • 1/4 cup all-purpose flour
  • 1/2 cup lukewarm water (filtered or bottled is preferred)

Instructions:

  1. Day 1-3: In a clean glass jar, combine the flour and water. Mix well. Cover loosely with a breathable lid and leave at room temperature (70-80°F).
  2. Day 2-7: Each day, discard half the starter and feed it again with equal amounts (¼ cup each) of flour and water. Mix well, cover, and let it rest. By day 5-7, you should start to see small bubbles forming on the surface.
  3. Day 8 onwards: You can switch to feeding every other day. Continue discarding half the starter and feeding it ¼ cup each of flour and water.
  4. Testing: By day 10-14, your starter might be ready. To test, take 1 tablespoon of starter and mix it with 3 tablespoons of water. If it floats within 30 minutes, it’s active and ready to use! If not, continue feeding every other day until it passes the test.

Sourdough bread is one of those mythical types of food for certain people. Those who have no idea what it is simply nod their heads, take a bite whenever they’re offered, and simply go on with their afterward without thinking twice about it. If that sounds like you, here’s why you should take a second to appreciate sourdough, and why you should be eating it more often.

A Healthier Bread

The truth is that sourdough bread is a much healthier alternative to that of regular bread. To be clear, when we say “regular” bread, we mean all bread that isn’t labeled as sourdough, even whole wheat. This is because sourdough isn’t made with artificial yeast, and most supermarket breads are.

The Original

Instead of artificial yeast, sourdough bread is made with what’s called “wild yeast”, which is essentially just naturally evolved yeast cultures. To put things a bit plainer, sourdough bread is how people have been making bread for centuries.

It was only in the last century that commercialized corporations introduced artificial yeast into the scene, making bread considerably less healthy on your stomach. Indeed, sourdough bread is a lot more kind to your digestive system, and a much more organic option than most breads you’ll find in any store.

When it comes to bread, many people assume that all bread is created equal. However, that’s far from the truth. Sourdough bread, in particular, stands out as a healthy and delicious option—and here’s why that’s true.

Wild Yeast Causes Better Digestion

Sourdough bread is made using a natural starter, which contains wild yeast and bacteria. The fermentation process that takes place during the making of sourdough bread is what sets it apart from other bread types. The wild yeast and bacteria work together to break down the gluten and other complex carbohydrates in the flour, making it easier for the body to digest.

Super Nutritious

The health benefits of sourdough bread don’t end there. This bread is also rich in nutrients, including B vitamins, iron, and zinc. Additionally, the fermentation process increases the bioavailability of minerals, making it easier for the body to absorb them.

Lower Glycemic Index

Sourdough bread also has a lower glycemic index than other bread types, meaning it doesn’t cause a rapid spike in blood sugar levels. This is beneficial for people with diabetes and those looking to manage their blood sugar levels.

Super Flavorful

As an added cherry on top, sourdough bread is also more flavorful than other bread types, with a slightly tangy taste. This makes it an excellent option for sandwiches or toast.

Though libraries are usually places that collect books, some of them can be a home to many other valuable items. The Puratos World Heritage Sourdough Library in St. Vith, Belgium, is a unique place in the world that safeguards over 100 bread starters.

It’s common to use a commercial yeast today, but for thousands of years, people needed to rely on starters if they wanted a nice sourdough bread. The starters consist of wild yeast and bacteria, which need to ferment for several days in order to create a living blob.
