The Only Sourdough Library in the World Is Located in Belgium

Though libraries are usually places that collect books, some of them can be a home to many other valuable items. The Puratos World Heritage Sourdough Library in St. Vith, Belgium, is a unique place in the world that safeguards over 100 bread starters.

It’s common to use a commercial yeast today, but for thousands of years, people needed to rely on starters if they wanted a nice sourdough bread. The starters consist of wild yeast and bacteria, which need to ferment for several days in order to create a living blob.
