3/4 pound lean ground beef
1 diced green onion

4-5 large green peppers

1-2 teaspoons minced thyme
1 teaspoon Creole seasoning

1 24-oz jar marinara sauce
1 15-oz part-skim ricotta cheese
2 teaspoons dried basil
4 1/4 oz chopped ripe olives

1 1/2 cups shredded Italian cheese blend
Boil the pasta according to the instructions on the package, then rinse it with cold water.
While you’re waiting for the pasta, add the butter in a skillet and cook the mushrooms and onions for 4-6 minutes. Include the garlic and cook one extra minute.
In a bowl, combine the spinach, eggs, pepper, ricotta cheese , and basil. Mix them well and add the previous mixture you cooked in the skillet, the 3/4 cup from the cheese blends, mozzarella, and olives.
Set the oven to 375 F degrees. Get a baking dish and pour 1 cup of the marinara sauce in. Stuff the shells with the mixture and put them in the dish. Add the rest of the sauce over them.
