These Cheesy Stuffed Mushrooms are Amazing

Ingredients

  • 16 large button mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 2 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup of breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of cream cheese
  • 2 tablespoons fresh parsley, finely chopped
  • Salt and pepper, to taste
  • Chopped fresh chives, for garnish (optional)

Instructions

  1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper and set aside. Clean the mushrooms with a damp paper towel to remove any dirt. Carefully remove the stems from the mushrooms and finely chop them. Set the mushroom caps aside.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until softened and fragrant, about 3-4 minutes. Add the chopped mushroom stems to the skillet and cook for an additional 2-3 minutes, until they release their moisture and become tender.
  3. Stir in the breadcrumbs, grated Parmesan cheese, cream cheese, and fresh parsley, mixing until well combined. Season with salt and pepper to taste. Spoon the filling into each mushroom cap, pressing down gently to pack the filling.
  4. Place the stuffed mushrooms onto the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown and bubbly. Remove the stuffed mushrooms from the oven and let them cool for a few minutes before serving.
  5. Garnish with chopped fresh chives, if desired, and serve hot.
