Nicoise salad is a classic French dish originating in Nice. Along with the delicious taste, the varied textures of this dish help it to stand out from the crowd. This recipe is ideal for a warm summer day when you want a fresh, light meal that is super satisfying. This recipe provides two servings and can easily be doubled. 

Ingredients:

  • 1 can tuna
  • 2 eggs
  • 8-10 new potatoes
  • ½ cup chopped green beans
  • 8-10 cherry tomatoes
  • 4-5 iceberg lettuce leaves 
  • 1 small red onion
  • ½ cup pitted black olives 
  • ¼ cup capers
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • ¼ cup fresh basil leaves
  • ½ teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl combine the olive oil, vinegar, mustard, and basil leaves and leave to one side. 
  2. Boil the eggs for 6-7 minutes and then add to a bowl of cold water. Leave to one side. 
  3. Bring a pot of salted water to the boil and add the potatoes. After 7 minutes add the green beans. Simmer for 3-5 more minutes and then drain and put to one side. 
  4. Roughly chop the lettuce leaves, halve the cherry tomatoes, finely slice the red onion, and add everything to a large salad bowl. 
  5. Add the olives and capers to the bowl and mix well. 
  6. Chop the potatoes into quarters, add them and the green beans to the salad bowl, pour over the dressing, and stir well. 
  7. Divide the salad into two bowls. Drain the tuna and scatter half over each bowl.
  8. Peel the eggs, slice them into quarters, and place half on top of each bowl. Season with salt and pepper and serve.

Blueberry Yogurt Popsicles

If you want something a little creamier, try this one. Heat up blueberries and honey over medium heat, simmering and mashing them together. Cool and combine with yogurt, mixing minimally to maintain a swirly pattern before pouring into popsicle molds and freezing.

Chocolate Almond Popsicles

Shrimp are a great gateway seafood to cook, because they’re really easy to prepare and they cook up really quickly. However, there are so many ways to utilize shrimp, so make sure you’re getting the best quality and closest shrimp to where you live and make these stellar recipes!

Shrimp Stock

When you buy fresh seafood, they come with the skin on and sometimes even the head! Getting rid of all that goodness would be such a shame, so after you clean and peel your shrimp, make sure to save everything and make it into a stock! Just throw the skins and heads into a pot with water, a bay leaf, black peppercorns, onion and garlic, and you’ll have an amazing base for super flavorful soups!

Grilled Shrimp

Anytime you can use your grill this summer, you should. Start by marinating the shrimp in the juice of half a lemon, ½ cup of olive oil, 1 teaspoon of salt, black pepper to taste, and 1 teaspoon of paprika to give it a kick. Let it sit in the fridge for 30 minutes to an hour, and then pop them onto the grill and cook until they turn pink!

With that being said, there’s a lot of possibilities for consuming watermelon. Here are three ways to use watermelon to make creative treats this summer!

Freeze It

Did you know that watermelon is over 90%, well, water? This means that you can freeze watermelon and create something that will be very similar to a popsicle! Try adding a little bit of lemon juice and sugar to watermelon cubes, and then put a wooden stick inside. Boom, natural watermelon popsicles!

There are tons of drink possibilities that involve watermelon, both alcoholic and non-alcoholic. Some of my favorite drinks that use watermelon include watermelon lemonade, vodka watermelon cocktails, and watermelon margaritas.

That’s right, you can grill slices of watermelon, and it’s absolutely delicious! My recommendation is to toss a little bit of chili powder on the slices, coat them with olive oil, and then pop them on the grill. It’s a surprisingly delicious side dish.

The internet is a funny place—you can take a food that’s been around forever, give it a new name or use the right buzzword and suddenly people can’t seem to eat enough of it (remember that “nature’s cereal” trend that was all over TikTok last year?) While the term “stone fruit” isn’t exactly new, the name seems to have taken off as an example of such a buzzword and inspired countless recipes from food bloggers as a result. It’s used to describe fruits such as peaches, cherries, and plums that have a stone-like pit in the center. These fruits are delicious on their own, but are even better as part of these popular recipes.

Stone Fruit Crostini

This crostini is easy to prepare, yet versatile enough to serve as both an appetizer at your next summer get-together or just for yourself should a craving strike. Use whatever fruit you have on hand and serve over some burrata cheese.

One of the most satisfying treats you can make during the summer – for adults and kids alike- is a popsicle. Not only are they sweet, but they’re also cold, a very appealing quality in a dessert when it’s scorching outside. So if you wanna treat yourself to a homemade ice pop this summer, here are three recipes we’d recommend.

Watermelon Strawberry Popsicles

This is one of our favorite popsicle recipes. Cut up strawberries into quarters and mix with honey or another sweetener. Wait some time to let the honey soak in, then blend the strawberries with cubed watermelon and lime juice until it reaches a smooth texture. Put in your popsicle mold and freeze for a few hours.

Blueberry Yogurt Popsicles

If you want something a little creamier, try this one. Heat up blueberries and honey over medium heat, simmering and mashing them together. Cool and combine with yogurt, mixing minimally to maintain a swirly pattern before pouring into popsicle molds and freezing.

Chocolate Almond Popsicles

Blend banana, almond milk, maple syrup, and almond butter in a blender and freeze in popsicle molds until solid. Dip into melted dark chocolate, coating with chopped almonds.

Shrimp are a great gateway seafood to cook, because they’re really easy to prepare and they cook up really quickly. However, there are so many ways to utilize shrimp, so make sure you’re getting the best quality and closest shrimp to where you live and make these stellar recipes!

Shrimp Stock

When you buy fresh seafood, they come with the skin on and sometimes even the head! Getting rid of all that goodness would be such a shame, so after you clean and peel your shrimp, make sure to save everything and make it into a stock! Just throw the skins and heads into a pot with water, a bay leaf, black peppercorns, onion and garlic, and you’ll have an amazing base for super flavorful soups!

Grilled Shrimp

Anytime you can use your grill this summer, you should. Start by marinating the shrimp in the juice of half a lemon, ½ cup of olive oil, 1 teaspoon of salt, black pepper to taste, and 1 teaspoon of paprika to give it a kick. Let it sit in the fridge for 30 minutes to an hour, and then pop them onto the grill and cook until they turn pink!

With that being said, there’s a lot of possibilities for consuming watermelon. Here are three ways to use watermelon to make creative treats this summer!

Freeze It

Did you know that watermelon is over 90%, well, water? This means that you can freeze watermelon and create something that will be very similar to a popsicle! Try adding a little bit of lemon juice and sugar to watermelon cubes, and then put a wooden stick inside. Boom, natural watermelon popsicles!

Make a Drink

There are tons of drink possibilities that involve watermelon, both alcoholic and non-alcoholic. Some of my favorite drinks that use watermelon include watermelon lemonade, vodka watermelon cocktails, and watermelon margaritas.

Grill It

That’s right, you can grill slices of watermelon, and it’s absolutely delicious! My recommendation is to toss a little bit of chili powder on the slices, coat them with olive oil, and then pop them on the grill. It’s a surprisingly delicious side dish.
