]]>The story of this drink dates back to the mid-1980s in Sydney, Australia. Few could have ever imagined that flat whites would become a worldwide hit when Alan Preston added the new coffee creation to his menu at Moors Espresso Bar.
His idea was to put a twist on a traditional cappuccino by offering a drink with less foam, but more milk and a smoother consistency.
The reasons for the surge in popularity of flat whites are mostly centered on how they offer coffee drinkers a different experience than a traditional cappuccino or a latte. Lattes have a very high ratio of milk to coffee and cappuccinos present their milk in the form of a very thick layer of foam.
Flat whites strike a different balance, offering only a very thin layer of microfoam that resists and is able to be enjoyed throughout the drink. Also, its ratio of coffee to milk is much higher, allowing the characteristics of the coffee used in the beverage to take center stage.

Any visitor to Ethiopia or diner at an Ethiopian restaurant will undoubtedly come into contact with this special bread, which is the centerpiece of any Ethiopian meal. What makes it so special, and why is it such a central piece of this country’s gastronomy?
Teff is a grain that grows in the Ethiopian Highlands and it’s the base for this delicious bread. The small grains of this plant, which are high in fiber and many minerals while being gluten-free, are mashed into flour and then added to water.
Fermentation is then triggered, and the dough sits for 2-3 days to create a slightly sour taste. Then, the injera is ready to be prepared.
Spread over a flat, circular griddle, injera is cooked and made into a bread with a spongy, absorbent texture.
Ethiopian stews, known as wat, are the most common thing to be eaten with injera. Made with lentils, chicken, or beef, they are spread on top of the bread and then eaten together with diners’ hands.

Believe it or not, the one food that saw the highest increase in popularity on the popular food delivery platform in 2018 was bean burritos. This Mexican-inspired dish combines lots of positive aspects, such as a spicy kick, all-vegetarian ingredients, and its normally economical price.
Poke continued its hot status last year, coming in at #2. This marinated seafood dish originating from Hawaii continues to tantalize diners outside of the Aloha State that has become familiar with it in the last couple of years.
Finally, coming in at #3 was chicken sliders. These mini chicken sandwiches saw a nearly 200% rise in popularity last year, which is probably due to its trending status as a smaller and more customizable form of a traditional chicken sandwich.

Although mezcal has been popular in Mexico for quite some time, it’s finally starting to gain popularity outside of its home country. You can make tons of delicious drinks and cocktails with mezcal, or even sip it alone.
Mezcal is made from the agave plant, just like tequila. However, the type of agave plant used to make tequila is the blue agave variety of the plant, which typically isn’t used for mezcal.
Mezcal is made by smoking the “fruit” part of the agave plant underground and then using it to make a distilled beverage. The smoking of the fruit gives mezcal a distinct “smoky” flavor that almost gives it a scotch-like character.
After being smoked and distilled, mezcal is aged in oak barrels for several months. Once this process is finished, it’s ready to drink.
