There’s nothing quite like using produce to the maximum!

Peel

People underestimate how much the peel matters in all forms of cooking. If you’re making a vinaigrette, you can use a microplane to zest in a little bit to add that extra bright flavor. Or, you can zest it into your favorite cakes and icings. You can also use a vegetable peeler to make bigger slices and use that as the garnish to a cocktail.

Juice

Grapefruit juice on its own is so delicious and tart, the perfect afternoon pick me up or morning treat, You can also use the juice to make salad dressings for savory salads or even fruit salads. Combine the juice with icing sugar and you have a simple fruity glaze to cakes, muffins and other baked goods, and mix some juice with tequila and you have a gorgeous cocktail.

Meat

The meat of the grapefruit is so juicy and perfect, which is why it’s such a favorite for breakfast. But, to spice it up, throw it into a salad with arugula and goat cheese and watch it sing. Or, use it as the star of a citrus and fennel salad!

A lot of people go into their fridge and pantry, and despite having shelves of beautiful food to choose from, feel like they have nothing to eat. This phenomenon is all too familiar in the western world, and it’s easy to get sucked in, but you have to resist!

Building up an arsenal of pantry staples is useless unless you’re actually going to use them, and every day your veggies sit in your fridge they run the risk of going to go bad.

For some people, it can be really difficult to look at what you have on hand and make a meal out of it. We find ourselves looking at recipes that require so much of what we don’t have but going for them anyway.

While this is good for special occasions, getting into the habit of making meals out of what you have is better for your wallet and the planet.

There’s no reason to waste more money on fruits and vegetables if you already have them in the house.

Also, food waste accounts for a large percentage of what gets sent to the landfill, so by making meals that utilize the foods you already have, you’re saving the planet and your wallet a lot of pain.

Apple cider vinegar is used in everything from marinades and vinaigrettes to detox drinks and medicinal uses. Apple cider vinegar gives you slightly more punch than regular vinegar, but still has a hint of sweetness from the apples. What’s incredible about apple cider vinegar is that you can actually make it at home by using apple cores and scraps so nothing gets wasted.

Ingredients

For homemade apple cider vinegar, you will need apples or apple scraps, filtered water, and either cane sugar or raw sugar. You will also need a large jar and some cheesecloth.

Method

  1. Clean the jar well with hot water.
  2. Put the apple scraps and cores into the jar. If using regular apples, cut them into small pieces.
  3. Dissolve the sugar into one cup of the filtered water.
  4. Pour the sugar water over the apples, along with extra filtered water so the apples are totally covered.
  5. Cover the jar with cheesecloth and secure with a rubber band.
  6. Leave the jar in a cool dark place for about 3 weeks.
  7. After three weeks, strain the mixture and discard of the apples.
  8. Leave the cider vinegar to continue fermenting for another few weeks but taste it so you know when it’s to your liking.
  9. Transfer to another jar and enjoy!

Chickpea can liquid, or aquafaba, is the star of these faux meringue cookies. This recipe is not only good for saving waste, it will also help out your vegan friends! Somehow this liquid can be treated as you would egg whites, so you only need to whip the liquid, add sugar, and bake! 

Pasta Water

The last thing you want to do after making pasta is to strain it and let the water go down the kitchen strain. This salty and starchy water helps pull together all types of sauce while not diluting it like regular water would.

No one wants to eat a limp vegetable, but it is too much of a waste to throw it away. If you’re looking for something to do with those veggies on their last leg, make a stock! Just boil them with water, any herbs you have on hand and you have homemade stock in no time.
