Making vegan gravy is so delicious and is actually really easy to do if you have almond milk on hand! All you need is to saute diced onions, mushrooms, and garlic with dried sage and salt. Then, whisk in flour and let the flavor cookout. Add in almond milk and vegetable stock and whisk until smooth. Let it cook for another few minutes and you’re all set!

Mashed Potatoes

Vegan mashed potatoes are just the thing you want when you need something light and fluffy but also homey and filling. Start off by peeling and boiling potatoes in water until they’re soft. Drain them and put them back into the pot. Add in softened chopped garlic, vegan butter, and almond milk a little bit at a time and mash until it’s the consistency you want. I haven't yet found a good brand of almond milk here so I am back to making it at home. The hardest part of the process is remembering to soak the almonds the night before 🙄. I love how fresh and clean this tastes – no preservatives and other artificial flavours. This is as pure as the bond between siblings 😁. Happy Raksha Bandhan to all celebrating. Ingredients 1 cup raw almonds 2 cups water A cheese cloth or a strainer Method Put the almonds in a bowl and cover them in water until they are completely covered. Soak the almonds in water, overnight. Drain the water and give the almonds a quick rinse and remove the skin (I prefer to remove it) Add the almonds and 2 cups of water to a blender and blend until the almonds are broken down into a fine meal and the water has turned white. Strain the almond milk into a jug/glass using a strainer or cheese cloth. If using a strainer, use the back of a spoon and press to release all the liquid from the meal.  If using a cheese cloth, twist and close the cloth around the almond meal and squeeze out as much liquid as possible. This is the easiest recipe by far. All you have to is get any type of oats, preferably oat groats or steel cut, but anything will work. Pour the oats into a blender with some water, blend, and strain with a cheesecloth. That’s all! Sometimes oat milk can change in texture when heated up, so make sure you test some in your microwave before you use it in a recipe that requires heating like sauces or soups.

Almond Milk

If you want a milk that is a bit fattier that could replace a dairy milk with a higher fat content, almond milk is the way to go. First, soak your almonds for at least a day if not 2 so they soften. Put them in a blender with water, blend, strain with a cheesecloth and you’re ready to go!
