Ratatouille is a classic French dish that is a perfect example of using a few simple yet quality ingredients and using their natural flavors to create a fresh, delicious taste. It’s comprised of stewed vegetables and is the perfect light dish for a summer evening. This recipe provides 4-6 servings. 

Ingredients:

  • 3 zucchinis
  • 6 large tomatoes
  • 1 large eggplant
  • 3 yellow bell peppers 
  • 1 large yellow onion
  • 3 cloves garlic
  • 1 cup fresh basil leaves, torn up
  • 2 teaspoons dried thyme
  • ¼ cup extra virgin olive oil
  • Salt and pepper, to taste

Instructions:

  1. Prepare all the vegetables by peeling, trimming, and chopping them into small chunks.
  2. Heat a little oil in a large pot and add the chopped zucchini. Add a little salt and gently fry until slightly browned and then put to one side.
  3. Repeat this with the bell peppers and eggplant. 
  4. Heat a little oil in the pot and add the chopped onion. Season with a little salt and pepper and gently fry until soft and slightly browned. 
  5. Add the garlic and the thyme and continue to fry for a further 5 minutes. 
  6. Add the sliced tomatoes and cook until it begins to resemble a sauce. 
  7. Remove from the heat and then add the cooked zucchini, bell peppers, and eggplant. 
  8. Pour the extra virgin olive oil in and gently stir to ensure the sauce and oil are mixed throughout. You can arrange the veg into slices or leave all mixed, it’s entirely up to you.
  9. Return to hob on low heat and place a lid on. Leave to simmer for 25-30 minutes.
  10. Remove from the heat and stir through the basil leaves.
  11. Leave to stand for 5-10 minutes before serving.

Do you like the sound of a tender slice of beef coupled with melted cheese in a succulent sandwich drizzled in au jus sauce? Then a French dip sandwich is certainly for you. Here is how you can prepare this scrumptious and wholesome sandwich for a wholesome meal.

Ingredients:

  • 6 hoagie rolls
  • 12 provolone slices
  • 3 ribeye steaks, boneless
  • 2 teaspoons oregano
  • 2 teaspoons black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 2 cloves garlic
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons thyme
  • 1/4 yellow onion
  • 1 1/2 cups beef broth

Instructions:

  1. Preheat oven to 450°F.
  2. Baste the olive oil all over the steaks before submerging them in a roasting pan.
  3. Mix sage, salt, pepper, and oregano in a small bowl. Massage the mixture into the meat.
  4. Roast the beef in the oven for 20 minutes.
  5. While waiting for the beef to cook, start making the jus.
  6. Start by placing a pan over medium heat and cook onion until soft, for about 3 minutes. Add garlic and thyme, cooking for another minute.
  7. Pour the Worcestershire sauce and beef broth into the pan and cook for 8 to 10 minutes.

Ingredients:

  • 2 cups heavy cream
  • 1 vanilla bean, split lengthwise
  • 5 large egg yolks
  • 1/2 cup granulated sugar, plus extra for caramelizing
  • Pinch of salt

Instructions:

  1. Preheat your oven to 325°F (160°C). In a saucepan, heat the heavy cream and vanilla bean over medium heat until it just starts to simmer. Remove from heat and let it sit for 15 minutes to allow the vanilla to infuse.
  2. In a mixing bowl, whisk together egg yolks, sugar, and a pinch of salt until the mixture is pale and slightly thickened.
  3. Remove the vanilla bean from the cream and slowly pour the warm cream into the egg mixture, whisking continuously to avoid curdling. Strain the custard mixture through a fine-mesh sieve into a pouring jug to remove any lumps. Pour the custard into ramekins.
  4. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes or until the custard is set around the edges but slightly jiggly in the center.
  5. Allow the crème brûlée to cool to room temperature, then refrigerate for at least 2 hours. Just before serving, sprinkle a thin layer of sugar on top and caramelize using a kitchen torch or under the broiler until the sugar forms a crispy crust. Let the sugar set for a minute, then indulge in the creamy, caramelized perfection of your homemade crème brûlée.

This delicious French onion chicken is the only recipes you need this weekend.

Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1/2 teaspoon dried sage
  • 2 pounds sliced Vidalia onions
  • 2 teaspoons balsamic vinegar
  • 1/3 cup extra-virgin olive oil
  • 1 cup grated swiss cheese
  • kosher salt
  • freshly grated pepper

Instructions:

Set the oven to 350 F degrees and get an oven-proof skillet. Add 2 tablespoons of olive oil in the skillet and place it on medium heat on the stove.

Cook the onions for 15 to 20 minutes, then pour the balsamic vinegar. Continue cooking for 3 to 5 more minutes.

When the onions get a dark golden brown color you can take the skillet off the heat and take the onions out. Fill the skillet with the rest of the olive oil. Add the chicken, sage, thyme, salt, and pepper.

Cook the meat on both sides then also take it out of the skillet.

Fill the skillet with the beef broth and wait for it to start boiling. Once it does, set the heat to medium-low. Add in the flour, then cook it for 5 to 7 minutes.

You can now include the onions and chicken back with the broth. Pour the swiss cheese as well.

Cook the French onion chicken in the oven until you notice that the cheese has melted.

Fortunately, it’s actually quite easy now to visit France’s wine regions to discover its vineyards and wineries. The only problem is that there are so many regions to choose from!

Here are my recommendations for three must-visit wine regions in France.

Bordeaux

Sandwiched the Garonne River and the Atlantic Ocean in southwestern France is one of the world’s premier regions for red wine. The unforgettable chateaus of the Bordeaux region and beautiful towns such as Saint-Emilion make it a must-visit for wine lovers, and that’s without even mentioning the blissful wine tastings that you’ll surely experience.

Champagne

Did you know that this world-famous sparkling wine is actually named after a French wine region? Champagne is located east of Paris in northeastern France and combines picturesque windmills with rolling hills and some of the world’s most famous and delicious sparkling wines.

Burgundy

In Eastern France, south of Paris, you’ll find the wine region of Burgundy, which produces full-bodied red and white wines that are a joy to drink. Here, you’ll find plenty of vineyards that grow well-known varietals such as Chardonnay and Pinot Noir. If you go in fall, you’ll find the grape leaves unforgettable as they acquire fiery red and orange hues.

  • 1 1/2 cups beef broth

Instructions:

  1. Preheat oven to 450°F.
  2. Baste the olive oil all over the steaks before submerging them in a roasting pan.
  3. Mix sage, salt, pepper, and oregano in a small bowl. Massage the mixture into the meat.
  4. Roast the beef in the oven for 20 minutes.
  5. While waiting for the beef to cook, start making the jus.
  6. Start by placing a pan over medium heat and cook onion until soft, for about 3 minutes. Add garlic and thyme, cooking for another minute.
  7. Pour the Worcestershire sauce and beef broth into the pan and cook for 8 to 10 minutes.
  8. Slice beef thinly and cut open the hoagie rolls. Insert the beef and provolone and drizzle in jus sauce, or simply put the sauce on the side for dipping.

Ingredients:

  • 2 cups heavy cream
  • 1 vanilla bean, split lengthwise
  • 5 large egg yolks
  • 1/2 cup granulated sugar, plus extra for caramelizing
  • Pinch of salt

Instructions:

  1. Preheat your oven to 325°F (160°C). In a saucepan, heat the heavy cream and vanilla bean over medium heat until it just starts to simmer. Remove from heat and let it sit for 15 minutes to allow the vanilla to infuse.
  2. In a mixing bowl, whisk together egg yolks, sugar, and a pinch of salt until the mixture is pale and slightly thickened.
  3. Remove the vanilla bean from the cream and slowly pour the warm cream into the egg mixture, whisking continuously to avoid curdling. Strain the custard mixture through a fine-mesh sieve into a pouring jug to remove any lumps. Pour the custard into ramekins.
  4. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes or until the custard is set around the edges but slightly jiggly in the center.
  5. Allow the crème brûlée to cool to room temperature, then refrigerate for at least 2 hours. Just before serving, sprinkle a thin layer of sugar on top and caramelize using a kitchen torch or under the broiler until the sugar forms a crispy crust. Let the sugar set for a minute, then indulge in the creamy, caramelized perfection of your homemade crème brûlée.

This delicious French onion chicken is the only recipes you need this weekend.

Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1/2 teaspoon dried sage
  • 2 pounds sliced Vidalia onions
  • 2 teaspoons balsamic vinegar
  • 1/3 cup extra-virgin olive oil
  • 1 cup grated swiss cheese
  • kosher salt
  • freshly grated pepper

Instructions:

Set the oven to 350 F degrees and get an oven-proof skillet. Add 2 tablespoons of olive oil in the skillet and place it on medium heat on the stove.

Cook the onions for 15 to 20 minutes, then pour the balsamic vinegar. Continue cooking for 3 to 5 more minutes.

When the onions get a dark golden brown color you can take the skillet off the heat and take the onions out. Fill the skillet with the rest of the olive oil. Add the chicken, sage, thyme, salt, and pepper.

Cook the meat on both sides then also take it out of the skillet.

Fill the skillet with the beef broth and wait for it to start boiling. Once it does, set the heat to medium-low. Add in the flour, then cook it for 5 to 7 minutes.

You can now include the onions and chicken back with the broth. Pour the swiss cheese as well.

Cook the French onion chicken in the oven until you notice that the cheese has melted.

Here are my recommendations for three must-visit wine regions in France.

Bordeaux

Sandwiched the Garonne River and the Atlantic Ocean in southwestern France is one of the world’s premier regions for red wine. The unforgettable chateaus of the Bordeaux region and beautiful towns such as Saint-Emilion make it a must-visit for wine lovers, and that’s without even mentioning the blissful wine tastings that you’ll surely experience.

Champagne

Did you know that this world-famous sparkling wine is actually named after a French wine region? Champagne is located east of Paris in northeastern France and combines picturesque windmills with rolling hills and some of the world’s most famous and delicious sparkling wines.

Burgundy

In Eastern France, south of Paris, you’ll find the wine region of Burgundy, which produces full-bodied red and white wines that are a joy to drink. Here, you’ll find plenty of vineyards that grow well-known varietals such as Chardonnay and Pinot Noir. If you go in fall, you’ll find the grape leaves unforgettable as they acquire fiery red and orange hues.
