With their distinctive, tropical taste and health-boosting properties, pineapples are a popular fruit to consume. You may already be drinking a glass of pineapple juice daily, but did you know there are many ways to use pineapple juice in your cooking? Check out these recipes, which all benefit from a  fruity boost courtesy of a glass of pineapple juice.

Glazed Ham

Ingredients (to serve 4):

  • 1 ham joint or pork shoulder
  • ½ cup of pineapple juice
  • 1 onion
  • 2 tablespoons of oil
  • 2 tablespoons of caster sugar
  • A small handful of sage

Instructions:

  1. Heat the oil in a pan and add the finely sliced onion. Cook until the onion has softened.
  2. Add the sugar, pineapple juice, and sage to the pan and stir well. Bring it to a high heat but don’t let it boil.
  3. Heat the oven to 350° F. Place the pork shoulder in a large roasting tin.
  4. Remove the glaze from the heat and allow it to cool. Prick the meat all over with a fork, and then pour the glaze over the meat and into the tin.
  5. Roast the meat for two hours, checking it every now and again. You may want to ladle some of the glaze back over the top of the meat halfway through cooking.
  6. Let the meat rest for half an hour before serving.

Pineapple Bread

Ingredients (to make one loaf):

  • 1 cup of plain flour
  • 1 teaspoon of baker’s yeast
  • ¼ cup of warm pineapple juice
  • ¼ cup of warm water
  • Oil

Instructions:

  1. Mix the water and pineapple juice together and then stir the yeast through. Set it aside for 5 minutes.
  2. In a large bowl, slowly pour the water into the flour, and then add a little oil if the dough is too dry. Knead thoroughly for 10 minutes.
  3. Leave the dough covered, in a warm place, to rise for 1 hour.
  4. Knead the bread again, ensuring it is stretchy and elastic.
  5. Bake in an oven heated to 340° F for 45 minutes.

Coconut and Lentil Soup

Ingredients (to serve 4):

  • ½ cup of cooked red lentils
  • 1 tin of coconut milk
  • ¼ cup of pineapple juice
  • Small piece of ginger
  • 2 cloves of garlic
  • 1 red chilli
  • Oil

Instructions:

  1. Heat the oil in a pan and add the sliced garlic, ginger, and chili.
  2. After 5 minutes, add the pineapple juice and stir well.
  3. After another 5 minutes, add the coconut milk and red lentils. Simmer for 10 minutes, and then serve.

Fruit can be amazing in so many ways, but it can also be incredibly inconvenient and frustrating in the wrong circumstances. Yeah, stickiness isn’t fun, which is why we’ve compiled this quick list of the stickiest fruits around.

Mango

Mango is notorious for being just as polarizing as we’ve described. It can be the tastiest fruit imaginable, but you have to be “ready” for it. You have to be in a circumstance where you’re ready to get your hand dirty because it might be the stickiest fruit in existence.

Orange

Oranges, while not usually as sticky as mangos, are also pretty darn sticky. Especially when you consider the fact that orange juice is always squirting out in all different directions while you’re eating it.

Pineapple

And then of course we have pineapples. This spiky fruit that looks like it could’ve been Tom Hanks’ best pal on an island in Cast Away is darn delicious, but also can be just as sticky as the rest of them. Just make sure you’ve got a napkin on hand!

It may not be summer yet, but that doesn’t mean you shouldn’t grill some pineapple, just to get the smell of summer in the air. Pineapple is perfect for grilling because of its high sugar content that allows the fruit to caramelize on high heat. Thanks to its juiciness, it won’t dry out, plus it’s easy to cut it into large flat slices. The firm flesh won’t break apart when you grill it, so there’s really no excuse not to try grilling some pineapple at home.

The best way to cut pineapple for grilling is into round, horizontal slices. You will need to remove the core, though, so if you don’t have a special tool for that, you can use a small round glass or cut each round slice into halves before removing the core with a knife.

You can then simply grill the pineapple slices over a medium-high grill for 4-5 minutes. Once one side browns, flip and let the other side grill, too. If you sprinkle a bit of salt on it, the sweetness of the fruit will become even more prominent.

Pineapple mojitos are perfect for everyone who needs a brand new cocktail and loves rum. Pineapple is the perfect match for this cocktail because it delivers a unique sweet taste. The total making time for the drink is just 5 minutes. All you need is a cocktail shaker or a big glass and a muddler. The recipe is meant for a single serving.

Ingredients:

  • 1 cup pineapple juice
  • 3 limes juiced
  • 4 oz rum
  • 1 cup simple syrup (equal parts heated water and sugar so that the sugar is melted)
  • 1 oz mint simple syrup
  • 3/4 oz mint leaves without stem
  • 16 oz club soda

For the Garnish:

  • 1 pineapple wedge
  • 2 sliced limes
  • 1/2 oz mint leaves

Instructions:

  1. Get a muddler and a large glass. Add the mint leaves and start muddling to release the juices.
  2. Pour in the lime juice, then add the simple syrup.
  3. Muddle the mixture again.
  4. Next, include the rum, pineapple juice, and mint simple syrup to the cocktail.
  5. Try the pineapple mojito to see if you want to add extra club soda.
  6. Get your mojito glass, fill it with ice. Pour in the drink, then decorate with limes, pineapple wedge, and mint on top.

Pineapple Paloma is a cocktail made with tequila, pineapple juice, and so many other delicious ingredients. The recipe below is meant for 4 servings.

Ingredients:

  • 4 tablespoons fresh lime juice
  • 5 slices fresh pineapple
  • 4 oz grapefruit soda
  • 4 1/2 oz silver tequila
  • 1/4 cup chili lime fruit seasoning
  • 2 6-oz cans 100% pineapple juice
  • 1/4 cup kosher salt

Instructions:

  • Get a plate and add 4 slices of pineapple on top of it. Cover the slices with 1/2 oz of the silver tequila.
  • On another plate add the kosher salt and chili lime seasoning. These two should be on two separate sides of the plate.
  • The recipe is meant for 4 servings, which means you will need 4 glasses.
  • Get the last slice of pineapple and go over the rim of the glasses with it.
  • Dip the rim of each glass into the plate with chili lime seasoning.
  • Dip the other side of the glass into the part with kosher salt.
  • When the glasses are done, fill them 3/4 with ice.
  • The next step is to add tequila in equal parts. Continue with 1/2 can of pineapple juice, 1 tablespoon lime juice, 1 oz of soda.
  • Get the pineapple slices and dip them into the seasoning. Cut them in the middle, then decorate the glasses with one slice per glass.

Quesdillas are one of our favorite quick dishes in the kitchen. Consisting simply of tortillas, cheese, and a little bit of butter or oil, this is such an easy, filling, and simple thing to make any time you’re in a bit of a rush.

Despite their simplicity, quesadillas can be modified in countless ways. The simple addition of one or two ingredients inside of your two tortillas can transform a quesadilla from dull to drab! Here are three suggestions for creative additions to your next quesadilla.

Mmm, cheese and creamy avocado. The delectable texture that avocado acquires when it gets warm and is in contact with melty cheese in a quesadilla is an absolute treasure. You can take heart in knowing that it’s authentic too, being popular in Mexican gastronomy!

Pineapple

Hear us out here. You might want to brown your pineapple in a skillet or on a grill before placing it in a quesadilla, but if you combine it with a cheese that isn’t too sharp or aggressive, this combination is actually extremely delicious.

Salads have come a long way. They used to be a simple addition to lunch or dinner, but now they come in so many shapes and flavors and with enough ingredients to be an independent meal. Below is the recipe for our favorite lunch of the summer – a grilled pineapple avocado salad from The Wooden Skillet blog.

Ingredients

  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 tablespoon olive oil
  • 2–3 cups fresh mixed greens

Dressing

  • 1/2 cup fresh-squeezed orange juice
  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 1/4 cup loosely packed fresh parsley
  • 3/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced shallots
  • pinch of salt

Instructions

  1. Blend all the dressing ingredients together.
  2. Grill the pineapple slices that you brushed with olive oil. 2 minutes per side on high heat should be enough.
  3. Cook corn on the cob and cut off the kernels from the cob.
  4. Put all the salad ingredients in a bowl and drizzle with dressing.
  5. You can also serve the dressing separately in a small bowl if you prefer it that way.

Pineapple is perfect for grilling because of its high sugar content that allows the fruit to caramelize on high heat. Thanks to its juiciness, it won’t dry out, plus it’s easy to cut it into large flat slices. The firm flesh won’t break apart when you grill it, so there’s really no excuse not to try grilling some pineapple at home.

The best way to cut pineapple for grilling is into round, horizontal slices. You will need to remove the core, though, so if you don’t have a special tool for that, you can use a small round glass or cut each round slice into halves before removing the core with a knife.

You can then simply grill the pineapple slices over a medium-high grill for 4-5 minutes. Once one side browns, flip and let the other side grill, too. If you sprinkle a bit of salt on it, the sweetness of the fruit will become even more prominent.

Pineapple mojitos are perfect for everyone who needs a brand new cocktail and loves rum. Pineapple is the perfect match for this cocktail because it delivers a unique sweet taste. The total making time for the drink is just 5 minutes. All you need is a cocktail shaker or a big glass and a muddler. The recipe is meant for a single serving.

Ingredients:

  • 1 cup pineapple juice
  • 3 limes juiced
  • 4 oz rum
  • 1 cup simple syrup (equal parts heated water and sugar so that the sugar is melted)
  • 1 oz mint simple syrup
  • 3/4 oz mint leaves without stem
  • 16 oz club soda

For the Garnish:

  • 1 pineapple wedge
  • 2 sliced limes
  • 1/2 oz mint leaves

Instructions:

  1. Get a muddler and a large glass. Add the mint leaves and start muddling to release the juices.
  2. Pour in the lime juice, then add the simple syrup.
  3. Muddle the mixture again.
  4. Next, include the rum, pineapple juice, and mint simple syrup to the cocktail.
  5. Try the pineapple mojito to see if you want to add extra club soda.
  6. Get your mojito glass, fill it with ice. Pour in the drink, then decorate with limes, pineapple wedge, and mint on top.

Pineapple Paloma is a cocktail made with tequila, pineapple juice, and so many other delicious ingredients. The recipe below is meant for 4 servings.

Ingredients:

  • 4 tablespoons fresh lime juice
  • 5 slices fresh pineapple
  • 4 oz grapefruit soda
  • 4 1/2 oz silver tequila
  • 1/4 cup chili lime fruit seasoning
  • 2 6-oz cans 100% pineapple juice
  • 1/4 cup kosher salt

Instructions:

  • Get a plate and add 4 slices of pineapple on top of it. Cover the slices with 1/2 oz of the silver tequila.
  • On another plate add the kosher salt and chili lime seasoning. These two should be on two separate sides of the plate.
  • The recipe is meant for 4 servings, which means you will need 4 glasses.
  • Get the last slice of pineapple and go over the rim of the glasses with it.
  • Dip the rim of each glass into the plate with chili lime seasoning.
  • Dip the other side of the glass into the part with kosher salt.
  • When the glasses are done, fill them 3/4 with ice.
  • The next step is to add tequila in equal parts. Continue with 1/2 can of pineapple juice, 1 tablespoon lime juice, 1 oz of soda.
  • Get the pineapple slices and dip them into the seasoning. Cut them in the middle, then decorate the glasses with one slice per glass.

Salads have come a long way. They used to be a simple addition to lunch or dinner, but now they come in so many shapes and flavors and with enough ingredients to be an independent meal. Below is the recipe for our favorite lunch of the summer – a grilled pineapple avocado salad from The Wooden Skillet blog.

Ingredients

  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 tablespoon olive oil
  • 2–3 cups fresh mixed greens

Dressing

  • 1/2 cup fresh-squeezed orange juice
  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 1/4 cup loosely packed fresh parsley
  • 3/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced shallots
  • pinch of salt

Instructions

  1. Blend all the dressing ingredients together.
  2. Grill the pineapple slices that you brushed with olive oil. 2 minutes per side on high heat should be enough.
  3. Cook corn on the cob and cut off the kernels from the cob.
  4. Put all the salad ingredients in a bowl and drizzle with dressing.
  5. You can also serve the dressing separately in a small bowl if you prefer it that way.
