3 Fantastic Uses for Pineapple Juice

With their distinctive, tropical taste and health-boosting properties, pineapples are a popular fruit to consume. You may already be drinking a glass of pineapple juice daily, but did you know there are many ways to use pineapple juice in your cooking? Check out these recipes, which all benefit from a  fruity boost courtesy of a glass of pineapple juice.

Glazed Ham

Ingredients (to serve 4):

  • 1 ham joint or pork shoulder
  • ½ cup of pineapple juice
  • 1 onion
  • 2 tablespoons of oil
  • 2 tablespoons of caster sugar
  • A small handful of sage

Instructions:

  1. Heat the oil in a pan and add the finely sliced onion. Cook until the onion has softened.
  2. Add the sugar, pineapple juice, and sage to the pan and stir well. Bring it to a high heat but don’t let it boil.
  3. Heat the oven to 350° F. Place the pork shoulder in a large roasting tin.
  4. Remove the glaze from the heat and allow it to cool. Prick the meat all over with a fork, and then pour the glaze over the meat and into the tin.
  5. Roast the meat for two hours, checking it every now and again. You may want to ladle some of the glaze back over the top of the meat halfway through cooking.
  6. Let the meat rest for half an hour before serving.

Pineapple Bread

Ingredients (to make one loaf):

  • 1 cup of plain flour
  • 1 teaspoon of baker’s yeast
  • ¼ cup of warm pineapple juice
  • ¼ cup of warm water
  • Oil

Instructions:

  1. Mix the water and pineapple juice together and then stir the yeast through. Set it aside for 5 minutes.
  2. In a large bowl, slowly pour the water into the flour, and then add a little oil if the dough is too dry. Knead thoroughly for 10 minutes.
  3. Leave the dough covered, in a warm place, to rise for 1 hour.
  4. Knead the bread again, ensuring it is stretchy and elastic.
  5. Bake in an oven heated to 340° F for 45 minutes.

Coconut and Lentil Soup

Ingredients (to serve 4):

  • ½ cup of cooked red lentils
  • 1 tin of coconut milk
  • ¼ cup of pineapple juice
  • Small piece of ginger
  • 2 cloves of garlic
  • 1 red chilli
  • Oil

Instructions:

  1. Heat the oil in a pan and add the sliced garlic, ginger, and chili.
  2. After 5 minutes, add the pineapple juice and stir well.
  3. After another 5 minutes, add the coconut milk and red lentils. Simmer for 10 minutes, and then serve.
