Potatoes are an incredible ingredient. There are so many things you can do with them, and they’re a great staple carb to have around. This recipe for a potato and veg hash is super tasty and so easy to make. It’s ideal if you have leftover vegetables and potatoes, but if not then it’s still a great choice. This dish pairs perfectly with fish or meat, or with beans for a vegan or vegetarian option.

Ingredients: (Serves 4)

  • 2 pounds potatoes
  • 1 large brown onion
  • 3 cloves garlic
  • 3 large carrots
  • ½ white cabbage
  • 1 large can of sweet corn
  • 1 tablespoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions:

  1. If you are starting from scratch, then chop the potatoes into 2-centimeter pieces and add them to a pot of salted, boiling water. Leave to simmer for 10-15 minutes.
  2. Meanwhile, finely slice the onion, garlic, carrots, and cabbage. 
  3. Heat some oil in a large frying pan and add the onion and carrot. Fry for 10 minutes. 
  4. Drain the potatoes and then add them and the cabbage to the pan. Add the thyme, paprika, salt, and pepper. 
  5. Fry for a further 5-10 minutes and then add the garlic and the drained sweet corn. 
  6. Continue to fry for another 10-15 minutes, stirring regularly. You want to see plenty of browning on all the vegetables and the potatoes. 
  7. Serve hot with your choice of protein.

Ingredients:

  • 3 potatoes
  • 1 teaspoon garlic powder
  • 3 green onions, sliced
  • 1 1/2 cups shredded cheddar
  • Sour cream
  • 2 tablespoons olive oil
  • Ground black pepper
  • Salt
  • 6 slices bacon
  • Cayenne pepper

Instructions:

  1. Preheat the oven to 400°F. In the meantime, slice potatoes into 1/2″ coins. Throw the potatoes into a large bowl and drizzle in olive oil.
  2. Add salt, pepper, garlic powder, and the cayenne pepper to the large bowl. Continue to toss the mixture until evenly coated and then place on a large baking sheet.
  3. Place in the oven and cook for 30 to 40 minutes. Once lightly browned, flip and cook the other side.
  4. Sprinkle the bacon and cheddar on the potatoes and broil for about two minutes until melted.
  5. Add a dollop of sour cream to each potato before sprinkling green onions.

Nothing says comfort food like potatoes, in any forms. However, there’s something about roast potatoes that just hits the spot every time, and they’re at their absolute best when they’re crispy on the outside and soft and fluffy on the inside.

The way you cook potatoes really makes all the difference. We all know potatoes are versatile, so if you’re looking for a quick roasted snack, you can use an air fryer. If you have more time on your hands, they’re just as good—if not better—in the oven.

Whichever way you choose to cook them, follow this simple recipe for the fluffiest roast potatoes you’ll ever make.

Ingredients:

  • 3 large potatoes (a floury, starchy type like Russets or Maris Piper)
  • Olive Oil
  • Garlic (cloves or powder)
  • Rosemary
  • Paprika (smoked, if you’d like)
  • Salt
  • Pepper
  • Roast Potato Seasoning (optional)

Instructions:

  1. Preheat your oven to 400°F, because a super hot oven is the optimal environment for crispy potatoes. If you’re using an air fryer, preheat it at 380°F for 3 minutes.
  2. Chop your potatoes into medium-large chunks. The pieces should be big enough that they’re not all crunch, and not so big that they can’t go crispy and fluffy while cooking.
  3. Parboil the potatoes in a big pot of salty water. Don’t skip this step, because parboiling is the key to getting your potatoes crispy and fluffy at the same time. You’ll know they’re done when they’re tender but not mushy.
  4. If you’re using an oven, pour some oil into your pan whilst the potatoes are parboiling so it’s super hot by the time they go in.
  5. Drain the potatoes and transfer them to a large bowl, or a pot with a lid.
  6. Shake! Give the potatoes a really vigorous shake until the edges are roughened—this is the essential step to give the roasties their famous fluffiness.
  7. Add any seasonings you’d like, and of course a drizzling of oil. We think a generous sprinkle of rosemary and paprika is the perfect flavor combination.
  8. Spread the potatoes out on the pan and use a spoon to pour some of the hot oil over them. Roast for 45-50 minutes, or until they’re crispy and golden.
  9. For air fryer users: place the seasoned spuds in the air fryer basket and cook for 10 minutes, before flipping them and cooking for another 10, until they look perfectly golden.
  10. Enjoy!

When it comes to comfort foods, few things can top some simple mashed potatoes. You don’t even need a real kitchen to make them—pantry ingredients and a microwave will do just fine. Here’s how to make the most comforting, delicious mashed potatoes you’ve ever had, and some suggestions for toppings.

Ingredients:

  • 1 large or 2 medium potatoes (or as many as you’d like to make)
  • Garlic to taste
  • Butter to taste
  • Milk to taste
  • Salt to taste
  • Optional toppings: pepper, cheese, sour cream, green onions

Instructions:

  1. Start by washing your potatoes thoroughly. It’s up to you if you’d like to peel them or not. Leaving the skin will give you some pockets of extra-chewy potato, and the skin has a lot of nutrients. But, this is up to personal preference. Either way, be sure to use a fork to poke lots of holes all over the potato.
  2. Put the potato in the microwave on high for around 3 minutes, then turn it over and cook for another 3.
  3. Use the fork to check how cooked the potato is, and continue microwaving until soft.
  4. Take out the potato and mash it up. Mash in as much butter and garlic as you’d like as well.
  5. Finish by adding a splash of milk or cream, salt, and any other mix-ins.
  6. Mix until just combined, keeping in mind that as you mix the mash will become more elastic. So, for creamier potatoes, don’t overmix. If you do accidentally, simply add more milk and salt and mix until you have the right consistency.

Here are a few examples of types of potatoes and what you should do with them.

Russet

One of the world’s most popular potatoes, sometimes called Rooster potatoes. They have a russet-colored skin and a starchy flesh. You can bake, fry, or boil them, and they are great for mashing. They are less suitable for stuffing as they do not hold their shape well.

French Fingerling

Smooth skins and moist flesh, these keep their shape after cooking and so are great for roasting and braising, but also for potato salads. Their flesh is considered waxy, so they might not be the best choice if you’re making a mash.

New Potatoes

Another global favorite, are smaller, sweeter, and waxier than the fully grown types, and have relatively thin skins that would break easily. Make the best of them by brushing them with seasoned oil and letting them roast in the oven.

hasselback potatoes with crunchy shoestring potatoes, crispy onions, crispy parmesan and spring onion.. بطاطس هسلباك وعليها خليط بطاطس كرنشي وبصل وبارميزان كرسبي وبصل أخضر.. البطاطس مره لذيذ وميزتة طري ومن برا كرنشي..😋👌🏻 الطريقة: حوالي كيلو بطاطس صغير ١/٢ إصبع زبدة ٢ ملعقة كبيرة زيت زيتون ١ ملعقة صغيرة ثوم مهروس بهارات ( بصل مجفف / بابريكا ) ملح وفلفل أسود وممكن تضيفون اعشاب لو حبيتوا مثلاً روزماري أو زعتر.. _ نغسل البطاطس زين ونخلي القشر .. نقطع البطاطس شرايح بس مانوصل للأخير.. والأفضل نحط البطاطس بين عودين تشوبستيكس ونقطعها كذا نكون متأكدين انه ماراح نقطعها للأخير.. نخلط الزبدة والزيت والثوم ونسخنها حتى تذوب الزبدة نضيف الملح والبهارات ولو مستخدمين أعشاب.. ندهن البطاطس من جميع الجهات بالخليط ونحاول انه الخليط يدخل جوا البطاطس.. نجهز صينية وندهنها من خليط الزبدة والزيت ونصف البطاطس وندخله الفرن على درجة ٢٠٠c راح ياخذ مابين ساعه إلى ساعه وربع حسب حجم البطاطس.. قبل نطلعه بربع ساعه نرجع ندهنة بالخليط مره ثانيه .. أختياري ( نجهز بطاطس كرنشي/ وبصل كرنشي/ وكرسبي بارميزان ونخلطهم مع بصل اخضر ونضيفهم جوا وعلى سطح البطاطس قبل التقديم ) .. _____ للصوص اللذيييييذ 👌🏻 سويت رانش بس بدال الساوركريم حطيت لبنه.. …. – ١/٢ كوب لبنة – ٣ ملاعق كبيرة مايونيز – لبن – شبت مفروم / بصل أخضر مفروم ( الكمية حسب الرغبة) – ملح وفلفل أسود – ثوم باودر ( حسب الرغبه ) نخلط جميع المكونات ونخفف الخليط باللبن والكمية حسب الرغبه.. وممكن لو حبينا نضيف له عصرة ليمون ..

Ingredients:

  • 8 medium potatoes
  • 2 tablespoons olive oil
  • 2 sprigs fresh rosemary

Instructions:

  1. Turn the oven to 425 F degrees and prepare a baking tray.
  2. Grind the rosemary without their stems and mix it with oil. Let the rosemary stay in the oil for a while so that it releases its flavors.
  3. Wash and dry the potatoes, making sure you remove all the dirt.
  4. Don’t forget to cut a little piece from the bottom of the potatoes so that they stay in place.
  5. Do cuts on each potato that are 1/4 to 1/8 inch wide. Don’t cut to the bottom, each piece has to stay connected in the bottom, and the potato needs to stay whole and not fall apart.
  6. Brush half of the oil over the potatoes.
  7. Line them up on the tray and bake the Hasselback potatoes for 30 minutes.
  8. Take out the tray and use the rest of the oil in between the slits of the potato. Add salt on top.
  9. Bake for 30 more minutes and the potatoes are ready to be served.

Potatoes are an incredible ingredient. There are so many things you can do with them, and they’re a great staple carb to have around. This recipe for a potato and veg hash is super tasty and so easy to make. It’s ideal if you have leftover vegetables and potatoes, but if not then it’s still a great choice. This dish pairs perfectly with fish or meat, or with beans for a vegan or vegetarian option.

Ingredients: (Serves 4)

  • 2 pounds potatoes
  • 1 large brown onion
  • 3 cloves garlic
  • 3 large carrots
  • ½ white cabbage
  • 1 large can of sweet corn
  • 1 tablespoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions:

  1. If you are starting from scratch, then chop the potatoes into 2-centimeter pieces and add them to a pot of salted, boiling water. Leave to simmer for 10-15 minutes.
  2. Meanwhile, finely slice the onion, garlic, carrots, and cabbage. 
  3. Heat some oil in a large frying pan and add the onion and carrot. Fry for 10 minutes. 
  4. Drain the potatoes and then add them and the cabbage to the pan. Add the thyme, paprika, salt, and pepper. 
  5. Fry for a further 5-10 minutes and then add the garlic and the drained sweet corn. 
  6. Continue to fry for another 10-15 minutes, stirring regularly. You want to see plenty of browning on all the vegetables and the potatoes. 
  7. Serve hot with your choice of protein.

Ingredients:

  • 3 potatoes
  • 1 teaspoon garlic powder
  • 3 green onions, sliced
  • 1 1/2 cups shredded cheddar
  • Sour cream
  • 2 tablespoons olive oil
  • Ground black pepper
  • Salt
  • 6 slices bacon
  • Cayenne pepper

Instructions:

  1. Preheat the oven to 400°F. In the meantime, slice potatoes into 1/2″ coins. Throw the potatoes into a large bowl and drizzle in olive oil.
  2. Add salt, pepper, garlic powder, and the cayenne pepper to the large bowl. Continue to toss the mixture until evenly coated and then place on a large baking sheet.
  3. Place in the oven and cook for 30 to 40 minutes. Once lightly browned, flip and cook the other side.
  4. Sprinkle the bacon and cheddar on the potatoes and broil for about two minutes until melted.
  5. Add a dollop of sour cream to each potato before sprinkling green onions.

Nothing says comfort food like potatoes, in any forms. However, there’s something about roast potatoes that just hits the spot every time, and they’re at their absolute best when they’re crispy on the outside and soft and fluffy on the inside.

The way you cook potatoes really makes all the difference. We all know potatoes are versatile, so if you’re looking for a quick roasted snack, you can use an air fryer. If you have more time on your hands, they’re just as good—if not better—in the oven.

Whichever way you choose to cook them, follow this simple recipe for the fluffiest roast potatoes you’ll ever make.

Ingredients:

  • 3 large potatoes (a floury, starchy type like Russets or Maris Piper)
  • Olive Oil
  • Garlic (cloves or powder)
  • Rosemary
  • Paprika (smoked, if you’d like)
  • Salt
  • Pepper
  • Roast Potato Seasoning (optional)

Instructions:

  1. Preheat your oven to 400°F, because a super hot oven is the optimal environment for crispy potatoes. If you’re using an air fryer, preheat it at 380°F for 3 minutes.
  2. Chop your potatoes into medium-large chunks. The pieces should be big enough that they’re not all crunch, and not so big that they can’t go crispy and fluffy while cooking.
  3. Parboil the potatoes in a big pot of salty water. Don’t skip this step, because parboiling is the key to getting your potatoes crispy and fluffy at the same time. You’ll know they’re done when they’re tender but not mushy.
  4. If you’re using an oven, pour some oil into your pan whilst the potatoes are parboiling so it’s super hot by the time they go in.
  5. Drain the potatoes and transfer them to a large bowl, or a pot with a lid.
  6. Shake! Give the potatoes a really vigorous shake until the edges are roughened—this is the essential step to give the roasties their famous fluffiness.
  7. Add any seasonings you’d like, and of course a drizzling of oil. We think a generous sprinkle of rosemary and paprika is the perfect flavor combination.
  8. Spread the potatoes out on the pan and use a spoon to pour some of the hot oil over them. Roast for 45-50 minutes, or until they’re crispy and golden.
  9. For air fryer users: place the seasoned spuds in the air fryer basket and cook for 10 minutes, before flipping them and cooking for another 10, until they look perfectly golden.
  10. Enjoy!

When it comes to comfort foods, few things can top some simple mashed potatoes. You don’t even need a real kitchen to make them—pantry ingredients and a microwave will do just fine. Here’s how to make the most comforting, delicious mashed potatoes you’ve ever had, and some suggestions for toppings.

Ingredients:

  • 1 large or 2 medium potatoes (or as many as you’d like to make)
  • Garlic to taste
  • Butter to taste
  • Milk to taste
  • Salt to taste
  • Optional toppings: pepper, cheese, sour cream, green onions

Instructions:

  1. Start by washing your potatoes thoroughly. It’s up to you if you’d like to peel them or not. Leaving the skin will give you some pockets of extra-chewy potato, and the skin has a lot of nutrients. But, this is up to personal preference. Either way, be sure to use a fork to poke lots of holes all over the potato.
  2. Put the potato in the microwave on high for around 3 minutes, then turn it over and cook for another 3.
  3. Use the fork to check how cooked the potato is, and continue microwaving until soft.
  4. Take out the potato and mash it up. Mash in as much butter and garlic as you’d like as well.
  5. Finish by adding a splash of milk or cream, salt, and any other mix-ins.
  6. Mix until just combined, keeping in mind that as you mix the mash will become more elastic. So, for creamier potatoes, don’t overmix. If you do accidentally, simply add more milk and salt and mix until you have the right consistency.

Here are a few examples of types of potatoes and what you should do with them.

Russet

One of the world’s most popular potatoes, sometimes called Rooster potatoes. They have a russet-colored skin and a starchy flesh. You can bake, fry, or boil them, and they are great for mashing. They are less suitable for stuffing as they do not hold their shape well.

French Fingerling

Smooth skins and moist flesh, these keep their shape after cooking and so are great for roasting and braising, but also for potato salads. Their flesh is considered waxy, so they might not be the best choice if you’re making a mash.

New Potatoes

Another global favorite, are smaller, sweeter, and waxier than the fully grown types, and have relatively thin skins that would break easily. Make the best of them by brushing them with seasoned oil and letting them roast in the oven.

hasselback potatoes with crunchy shoestring potatoes, crispy onions, crispy parmesan and spring onion.. بطاطس هسلباك وعليها خليط بطاطس كرنشي وبصل وبارميزان كرسبي وبصل أخضر.. البطاطس مره لذيذ وميزتة طري ومن برا كرنشي..😋👌🏻 الطريقة: حوالي كيلو بطاطس صغير ١/٢ إصبع زبدة ٢ ملعقة كبيرة زيت زيتون ١ ملعقة صغيرة ثوم مهروس بهارات ( بصل مجفف / بابريكا ) ملح وفلفل أسود وممكن تضيفون اعشاب لو حبيتوا مثلاً روزماري أو زعتر.. _ نغسل البطاطس زين ونخلي القشر .. نقطع البطاطس شرايح بس مانوصل للأخير.. والأفضل نحط البطاطس بين عودين تشوبستيكس ونقطعها كذا نكون متأكدين انه ماراح نقطعها للأخير.. نخلط الزبدة والزيت والثوم ونسخنها حتى تذوب الزبدة نضيف الملح والبهارات ولو مستخدمين أعشاب.. ندهن البطاطس من جميع الجهات بالخليط ونحاول انه الخليط يدخل جوا البطاطس.. نجهز صينية وندهنها من خليط الزبدة والزيت ونصف البطاطس وندخله الفرن على درجة ٢٠٠c راح ياخذ مابين ساعه إلى ساعه وربع حسب حجم البطاطس.. قبل نطلعه بربع ساعه نرجع ندهنة بالخليط مره ثانيه .. أختياري ( نجهز بطاطس كرنشي/ وبصل كرنشي/ وكرسبي بارميزان ونخلطهم مع بصل اخضر ونضيفهم جوا وعلى سطح البطاطس قبل التقديم ) .. _____ للصوص اللذيييييذ 👌🏻 سويت رانش بس بدال الساوركريم حطيت لبنه.. …. – ١/٢ كوب لبنة – ٣ ملاعق كبيرة مايونيز – لبن – شبت مفروم / بصل أخضر مفروم ( الكمية حسب الرغبة) – ملح وفلفل أسود – ثوم باودر ( حسب الرغبه ) نخلط جميع المكونات ونخفف الخليط باللبن والكمية حسب الرغبه.. وممكن لو حبينا نضيف له عصرة ليمون ..

Ingredients:

  • 8 medium potatoes
  • 2 tablespoons olive oil
  • 2 sprigs fresh rosemary

Instructions:

  1. Turn the oven to 425 F degrees and prepare a baking tray.
  2. Grind the rosemary without their stems and mix it with oil. Let the rosemary stay in the oil for a while so that it releases its flavors.
  3. Wash and dry the potatoes, making sure you remove all the dirt.
  4. Don’t forget to cut a little piece from the bottom of the potatoes so that they stay in place.
  5. Do cuts on each potato that are 1/4 to 1/8 inch wide. Don’t cut to the bottom, each piece has to stay connected in the bottom, and the potato needs to stay whole and not fall apart.
  6. Brush half of the oil over the potatoes.
  7. Line them up on the tray and bake the Hasselback potatoes for 30 minutes.
  8. Take out the tray and use the rest of the oil in between the slits of the potato. Add salt on top.
  9. Bake for 30 more minutes and the potatoes are ready to be served.
