Potatoes are an incredible ingredient. There are so many things you can do with them, and they’re a great staple carb to have around. This recipe for a potato and veg hash is super tasty and so easy to make. It’s ideal if you have leftover vegetables and potatoes, but if not then it’s still a great choice. This dish pairs perfectly with fish or meat, or with beans for a vegan or vegetarian option.
Ingredients: (Serves 4)
- 2 pounds potatoes
- 1 large brown onion
- 3 cloves garlic
- 3 large carrots
- ½ white cabbage
- 1 large can of sweet corn
- 1 tablespoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions:
- If you are starting from scratch, then chop the potatoes into 2-centimeter pieces and add them to a pot of salted, boiling water. Leave to simmer for 10-15 minutes.
- Meanwhile, finely slice the onion, garlic, carrots, and cabbage.
- Heat some oil in a large frying pan and add the onion and carrot. Fry for 10 minutes.
- Drain the potatoes and then add them and the cabbage to the pan. Add the thyme, paprika, salt, and pepper.
- Fry for a further 5-10 minutes and then add the garlic and the drained sweet corn.
- Continue to fry for another 10-15 minutes, stirring regularly. You want to see plenty of browning on all the vegetables and the potatoes.
- Serve hot with your choice of protein.
