If you’re looking for a scrumptious and healthy dish that’s also quick and easy to prepare, then look no further—a scrumptious salmon quinoa is sure to check all your boxes. Here is your guide to preparing a nutritious salmon quinoa bowl at home.

Ingredients:

  • zest and juice of 1 lemon
  • ground black pepper
  • 1/2 avocado
  • 1/2 cup fresh dill
  • 1/4 cup Greek yogurt
  • 2 cucumbers
  • 2 ounces baby arugula
  • 2 cooked quinoa
  • 2 tablespoons olive oil
  • 4 salmon fillets
  • lemon wedges
  • flaky sea salt
  • salt to taste

Instructions:

  1. Preheat your oven to 325ºF. As you wait, place the salmon fillets on a baking sheet and season them with salt and pepper on both sides. Bake for 18 to 20 minutes.
  2. While baking the salmon, put the avocado, dill, lemon zest, juice, and yogurt into your food processor. Add 2 tablespoons of oil and 2 tablespoons of water and season with salt and pepper. Blend and transfer the dressing to a small bowl.

You have probably heard about the many benefits of quinoa, but have you tried it for breakfast yet? Quinoa is a great way to start the day because it will provide you with a hefty serving of protein, vitamins, and fiber. One way to have it is in the form of porridge, with pumpkin and lots of spice. Leftovers can be kept in the refrigerator for up to six days. Here’s how to make pumpkin quinoa porridge.

Ingredients:

  • 1 1/2 cups uncooked quinoa (rinsed)
  • 12 ounces almond milk
  • 8 ounces of water
  • Coconut oil as needed (for rice cooker option)
  • 1 cup to 1 1/2 cups pumpkin puree (a few tbsp for topping as well)
  • 1/3 cup additional coconut milk
  • 1/3 cup unsweetened shredded coconut
  • 1 teaspoon cinnamon (and some for topping)
  • 1/2 teaspoon pumpkin spice (optional)
  • pinch of ground ginger (optional)
  • 4 + 1 tablespoon maple syrup or honey (adjust to taste)
  • Toppings of choice: chopped nuts, gluten-free oats or granola, etc

Instructions:

  1. In a medium pot, bring water and milk to a light boil then add quinoa and cover on low to medium-low.
  2. About halfway through cooking (8 or 9 minutes) stir in your pumpkin puree. Cover again and wait till it’s cooked and the quinoa is fluffy (about another 8-10 minutes or so).
  3. Turn off the heat and keep the pumpkin quinoa on the burner. Stir in the liquid coconut milk or canned coconut milk and spices. Mix thoroughly
  4. Stir in shredded coconut and maple syrup.
  5. Spoon into bowls and top with 1 tablespoon of additional pumpkin and more coconut milk for extra creaminess if you’d like. You can also sprinkle with additional cinnamon and toppings of your choice.

Quinoa is a seed that is native to South America that has now overtaken the globe. Although it is a seed, it’s treated like a grain and cooked as such. It also has the same nutritional makeup as traditional grains, but with the addition of protein! The only thing wrong with quinoa is that it can sometimes be difficult to make. However, if you follow these steps, you’ll make perfect quinoa every time!

Rinsing

Quinoa is naturally bitter, so before you start cooking it, pour it into a fine mesh sieve and rinse it off. That will take off some of the bitter coatings.

Liquids

You can make quinoa with regular water, but it will turn out more flavorful if you mix it up with broth or stock. Also, most recipes will tell you to use 1 part quinoa to 2 parts liquid, but oftentimes you will need 3 parts liquid.

To get that restaurant qualified fluffy quinoa, the answer is simple; steam. Once all the liquid has been absorbed by the quinoa, the trick is to take the pot off the heat and cover it with the lid and leave it for 10 minutes. This will allow the heat to remain in the pot and let the quinoa puff up and become fluffy!
