How to Create Your Own Salmon Quinoa Bowl

  • zest and juice of 1 lemon
  • ground black pepper
  • 1/2 avocado
  • 1/2 cup fresh dill
  • 1/4 cup Greek yogurt
  • 2 cucumbers
  • 2 ounces baby arugula
  • 2 cooked quinoa
  • 2 tablespoons olive oil
  • 4 salmon fillets
  • lemon wedges
  • flaky sea salt
  • salt to taste


  1. Preheat your oven to 325ºF. As you wait, place the salmon fillets on a baking sheet and season them with salt and pepper on both sides. Bake for 18 to 20 minutes.
  2. While baking the salmon, put the avocado, dill, lemon zest, juice, and yogurt into your food processor. Add 2 tablespoons of oil and 2 tablespoons of water and season with salt and pepper. Blend and transfer the dressing to a small bowl.
  3. Place the arugula into a bowl and season with salt and pepper.
  4. Drizzle with the dressing and toss onto your plate. Top with salmon, quinoa, and cucumber. Season with dill and sea salt and serve with lemon wedges.
