Nicoise salad is a classic French dish originating in Nice. Along with the delicious taste, the varied textures of this dish help it to stand out from the crowd. This recipe is ideal for a warm summer day when you want a fresh, light meal that is super satisfying. This recipe provides two servings and can easily be doubled. 

Ingredients:

  • 1 can tuna
  • 2 eggs
  • 8-10 new potatoes
  • ½ cup chopped green beans
  • 8-10 cherry tomatoes
  • 4-5 iceberg lettuce leaves 
  • 1 small red onion
  • ½ cup pitted black olives 
  • ¼ cup capers
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • ¼ cup fresh basil leaves
  • ½ teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl combine the olive oil, vinegar, mustard, and basil leaves and leave to one side. 
  2. Boil the eggs for 6-7 minutes and then add to a bowl of cold water. Leave to one side. 
  3. Bring a pot of salted water to the boil and add the potatoes. After 7 minutes add the green beans. Simmer for 3-5 more minutes and then drain and put to one side. 
  4. Roughly chop the lettuce leaves, halve the cherry tomatoes, finely slice the red onion, and add everything to a large salad bowl. 
  5. Add the olives and capers to the bowl and mix well. 
  6. Chop the potatoes into quarters, add them and the green beans to the salad bowl, pour over the dressing, and stir well. 
  7. Divide the salad into two bowls. Drain the tuna and scatter half over each bowl.
  8. Peel the eggs, slice them into quarters, and place half on top of each bowl. Season with salt and pepper and serve.

Now, with spring here and summer on its way, salads start to sound attractive again. You can ease yourself into the salad-eating season with this hearty, flavorsome potato salad. It’s satisfying enough to keep out the spring chills, all while delivering an incredible array of vitamins and minerals thanks to the super-healthy ingredients. To top it all off, it can be ready and on the table in under 20 minutes—what’s not to like?

Ingredients (to serve 4):

  • 2 cups of new potatoes
  • 2 courgettes
  • 1 tablespoon of olive oil
  • 1 teaspoon of red wine vinegar
  • 1 teaspoon of honey
  • Salt and pepper, for seasoning
  • 2 cups of raw salad leaves, such as spinach or arugula
  • 1 tablespoon of mayonnaise
  • 1 small bunch of fresh mint
  • 1 small bunch of fresh chives
  • 2 scallions, finely chopped
  • 1/2 cup of fresh tomatoes, finely sliced

Instructions:

  1. Bring a pan of salted water to a boil. Add the potatoes and cook for 10 – 12 minutes, until they can be easily pierced with a fork.
  2. Allow the potatoes to cool slightly. Meanwhile, mix the mayonnaise, olive oil, vinegar, and honey together. Stir vigorously until the liquids have emulsified. Season this dressing with salt and pepper.
  3. Finely slice the courgettes into matchsticks.
  4. Shred the fresh herbs and add these to the mayonnaise salad dressing.
  5. In a large salad bowl, mix the potatoes, courgettes, salad leaves, and sliced tomatoes together.
  6. Dress the ingredients with the dressing, stirring to ensure everything is well coated and combined.
  7. Serve immediately.

If you’re eating a lot of heavy food this winter, you may want something to keep you feeling fresh. This leafy green salad is packed full of vitamins and minerals, as well as flavor. It can be adapted to suit your preferences, but here’s a template of this salad that you can take in your own direction.

Ingredients

  • Half of a lettuce
  • Half a cucumber
  • 3 scallions
  • A large handful of pumpkin seeds
  • A large handful of olives
  • A large handful of walnuts
  • 1 tablespoon of olive oil
  • 1 cup of cheddar (optional)
  • 2 slices of crusty sourdough bread (optional)

Instructions

  1. Shred up your lettuce and mix in a bowl along with your cucumber, which should be in small chunks. Chop up your olives and scallions into small slices and add them into the mix.
  2. Break up your walnuts with a pestle and mortar and add them into the bowl. Chuck in your pumpkin seeds as well and drizzle your olive oil into the salad.
  3. Crumble up your cheddar if you want it in there, and add to the mix. You can also cut your sourdough bread into small chunks and add it into your salad if you want it to be more filling. Your salad is ready to serve, but you can adapt it in any way and you will still have a great base for a healthy and delicious salad!

They often say that misery loves company, but in this case, we love “misery”! Mizeria, which translates from Polish as “misery”, is the bizarre name given to this otherwise delightful salad. Because it includes only a handful of ingredients it earned a reputation as food for the poor, but we think the combination of being quick, easy, and delicious puts this cucumber salad’s worth way above the rest.

Ingredients:

  • 2 English cucumbers
  • 1 medium red onion, finely sliced
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons white wine vinegar
  • ⅓ cup chopped fresh dill
  • ¾ teaspoon sugar
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions:

  1. Cut the cucumbers in half and then slice each half down the middle lengthwise. Use the tip of a teaspoon to scoop out the center seeds. Cut each half into thin slices and place in a colander with the onion. Toss with the salt and let them sit in the sink for at least 30 minutes, until the water drains out.
  2. In a medium bowl, combine the sour cream, mayonnaise, white wine vinegar, dill, sugar, and black pepper and mix well.
  3. When the cucumbers and onions are ready, remove any excess water by tapping the colander several times on the base of the sink, then use a large wad of paper towels or clean dish towel to pat the vegetables dry. Add them to the dressing and toss well. Cover and chill until ready to serve.

Ingredients (to serve 4):

  • 2 avocados
  • 4 big handfuls of spinach
  • 1/2 cup of broccoli florets
  • 5 spring onions
  • 12 cherry tomatoes
  • 1/2 cup of cooked chickpeas
  • 3 tablespoons of pumpkin seeds
  • 3 tablespoons of sunflower seeds
  • For the dressing:
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1/2 teaspoon of salt

Instructions:

  1. Peel and de-stone the avocados, cut into cubes.
  2. Grate the broccoli and shred the spinach.

If you’re eating a lot of heavy food this winter, you may want something to keep you feeling fresh. This leafy green salad is packed full of vitamins and minerals, as well as flavor. It can be adapted to suit your preferences, but here’s a template of this salad that you can take in your own direction.

Ingredients

  • Half of a lettuce
  • Half a cucumber
  • 3 scallions
  • A large handful of pumpkin seeds
  • A large handful of olives
  • A large handful of walnuts
  • 1 tablespoon of olive oil
  • 1 cup of cheddar (optional)
  • 2 slices of crusty sourdough bread (optional)

Instructions

  1. Shred up your lettuce and mix in a bowl along with your cucumber, which should be in small chunks. Chop up your olives and scallions into small slices and add them into the mix.
  2. Break up your walnuts with a pestle and mortar and add them into the bowl. Chuck in your pumpkin seeds as well and drizzle your olive oil into the salad.
  3. Crumble up your cheddar if you want it in there, and add to the mix. You can also cut your sourdough bread into small chunks and add it into your salad if you want it to be more filling. Your salad is ready to serve, but you can adapt it in any way and you will still have a great base for a healthy and delicious salad!

Ingredients:

  • 2 romaine lettuce hearts
  • 4-5 scallions
  • ¼ cup fresh dill, finely chopped
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon mint, finely chopped
  • ½ cup Greek olive oil
  • 3-4 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon dried oregano
  • A pinch of salt

Instructions:

  1. Thinly slice the lettuce and scallions and place them in a bowl with the fresh herbs. 
  2. Whisk together the olive oil, vinegar, oregano, and salt until it emulsifies. 
  3. Pour the dressing over the salad greens and toss.

They often say that misery loves company, but in this case, we love “misery”! Mizeria, which translates from Polish as “misery”, is the bizarre name given to this otherwise delightful salad. Because it includes only a handful of ingredients it earned a reputation as food for the poor, but we think the combination of being quick, easy, and delicious puts this cucumber salad’s worth way above the rest.

Ingredients:

  • 2 English cucumbers
  • 1 medium red onion, finely sliced
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons white wine vinegar
  • ⅓ cup chopped fresh dill
  • ¾ teaspoon sugar
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions:

  1. Cut the cucumbers in half and then slice each half down the middle lengthwise. Use the tip of a teaspoon to scoop out the center seeds. Cut each half into thin slices and place in a colander with the onion. Toss with the salt and let them sit in the sink for at least 30 minutes, until the water drains out.
  2. In a medium bowl, combine the sour cream, mayonnaise, white wine vinegar, dill, sugar, and black pepper and mix well.
  3. When the cucumbers and onions are ready, remove any excess water by tapping the colander several times on the base of the sink, then use a large wad of paper towels or clean dish towel to pat the vegetables dry. Add them to the dressing and toss well. Cover and chill until ready to serve.
