Ingredients (to serve 4):
- 2 avocados
- 4 big handfuls of spinach
- 1/2 cup of broccoli florets
- 5 spring onions
- 12 cherry tomatoes
- 1/2 cup of cooked chickpeas
- 3 tablespoons of pumpkin seeds
- 3 tablespoons of sunflower seeds
- For the dressing:
- 2 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- 1/2 teaspoon of salt
Instructions:
- Peel and de-stone the avocados, cut into cubes.
- Grate the broccoli and shred the spinach.
- Finely slice the spring onions and the tomatoes.
- Make the dressing by whisking together the oil and vinegar. Stir in the salt.
