Try This Super Healthy Salad for Something Fresh and Tasty

As much as we all love rich, indulgent food, every now and again we all get a craving for something fresh and super healthy. When you’re feeling like this, reach for this recipe, which delivers a super healthy salad in next to no time.

Ingredients (to serve 4):

  • 2 avocados
  • 4 big handfuls of spinach
  • 1/2 cup of broccoli florets
  • 5 spring onions
  • 12 cherry tomatoes
  • 1/2 cup of cooked chickpeas
  • 3 tablespoons of pumpkin seeds
  • 3 tablespoons of sunflower seeds
  • For the dressing:
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1/2 teaspoon of salt

Instructions:

  1. Peel and de-stone the avocados, cut into cubes.
  2. Grate the broccoli and shred the spinach.
  3. Finely slice the spring onions and the tomatoes.
  4. Make the dressing by whisking together the oil and vinegar. Stir in the salt.
  5. Arrange everything in a large salad bowl and drizzle over the dressing.
