2 pounds small or medium shrimp peeled and deveined
1 cup chopped yellow onion
3 cloves finely minced onion
1/2 cup all-purpose flour
1/2 teaspoon black pepper
1 teaspoon Cajun seasoning
1/2 teaspoon white pepper
1 8-oz can clam juice
salt
1 cup chopped celery
1/2 cup oil
1 14.5-oz can diced tomatoes
1/2 stick butter
2 to 3 dashes hot sauce
1/2 cup minced fresh parsley leaves
1/2 cup chopped green bell pepper
1/2 cup minced green onions
1/2 teaspoon cayenne pepper
Mix the oil and flour in a pan and cook them on low heat. Wait until they turn into a thick sauce, it will take 15 to 20 minutes.
Add the celery, garlic, onion, green pepper, and continue cooking on low heat for 5 minutes.
Now, stir in the cayenne pepper, white pepper, black pepper, green onions, Cajun seasoning, hot sauce, and parsley. Add the can of clam juice, mix well. Then you can pour the tomatoes with salt to your liking.
When the mixture starts boiling, you can lower the heat and let it simmer for 15 minutes.
Once it’s done, include the shrimp. Wait for 3 minutes then take the pot off the stove.
Finish off by adding the butter. Serve the shrimp etouffee with rice.

If you want them to be a deeper red, you can also use a little beet juice or beet powder. Throw 1 pound of shrimp into the bowl mix well, and cover in the fridge for 30 minutes up to 2 hours.
Once the shrimp have marinaded for at least 30 minutes, wet some skewers and then put the shrimp onto them.
