Salads are the best way to stay healthy, especially in summer. This watermelon shrimp salad mixes so many different tastes but it’s the most delicious thing.
Ingredients:
- 4 cups arugula
- 1 tablespoon plus 2 teaspoons olive oil
- 1 teaspoon honey
- 8 4-inch seedless watermelon wedges
- 1/4 teaspoon freshly ground black pepper
- 1 pound large peeled and deveined shrimp
- 1/2 thinly sliced small red onion
- 4 oz crumbled feta cheese
- 2 tablespoons fresh lime juice
- 1/4 cup sliced fresh mint
- 3/4 teaspoons kosher salt
- olive oil cooking spray
Instructions:
Get a grill pan and add 2 tablespoons olive oil. Add the shrimp and mix it with 1/4 teaspoon pepper and 1/4 teaspoon salt.
Cook the shrimp for 2 minutes per side, then put them on a plate.
Combine the honey, a little pepper, 1/2 teaspoon salt, and lime juice together in a bowl. Add 1 tablespoon olive oil. This will be your dressing for the watermelon shrimp salad.
Use a bowl to mix the 2 tablespoons mint, red onion, and the dressing.
The recipe is meant for 4 servings, so you will need 4 plates. Divide the arugula between the plates, then add 1/4 of the onion mix in each one. Also, add 2 melon wedges per plate.
Finish off with 6 shrimp per plate, feta cheese and a little bit of mint.
