Many of us are familiar with a classic lunchtime favorite known as a grilled cheese sandwich. While certainly scrumptious, this cheesy snack may get a bit boring after a while if you don’t shake things up a bit. Here’s your guide to making a Greek grilled cheese sandwich that is sure to make for a satisfying new snack.

Ingredients:

  • 1 cup crumbled feta
  • 1 jar red peppers
  • 1/2 cup kalamata olives
  • 2 tablespoons dill
  • 3 cups shredded mozzarella
  • 8 slices sourdough bread
  • softened butter

Instructions

  1. Spread butter on one side of each slice of bread. Put 4 slices of bread butter side down and top each slice with feta cheese, kalamata olives, red peppers, mozzarella, and dill.
  2. Top each sandwich with the remaining 4 slices of bread with the buttered side face up.
  3. Heat a skillet over medium heat. Add one sandwich and cook for about 2 to 3 minutes until the bread is bronzing and the cheese is melting. Flip the sandwich and cook for 2 to 3 minutes more.
  4. Repeat the process with the remaining sandwiches.

Cheese sauce is a great dish to make yourself, as it’s really easy but is so much better than any shop-bought version. This recipe uses very simple ingredients but has very tasty results. You can easily multiply the ingredients to make a larger amount, or add any extra flavorings you might like. Here are two ideas for using this delicious sauce as well. 

Ingredients:

(Serves 2)

  • 1 tablespoon oil
  • 1 tablespoon plain flour 
  • 1 cup milk
  • ½ teaspoon smoked paprika
  • ½ teaspoon mustard
  • Salt and pepper, to taste
  • ½ cup shredded cheese

Instructions:

  1. Heat the oil in a pan and then add the flour.
  2. Stir well to form a smooth paste.
  3. Gradually add the milk a small amount at a time, stirring well each time to combine it.
  4. Once all the milk is in, add the paprika, mustard, salt, and pepper.
  5. Increase the heat.
  6. Simmer gently stirring constantly for 5 minutes.
  7. Add the cheese and heat for another 5 minutes, until the sauce has thickened.
  8. Remove from the heat ready to be used in your meal.

Cauliflower Cheese

Boil or steam some cauliflower. Place in an oven-proof dish and then pour the cheese sauce over and stir through. Place in the oven for 20-30 minutes. 

Lasagne

Layer the cheese sauce between pasta sheets and bolognese sauce and bake in the oven for 30-40 minutes.

There are two ingredients that make just about anything taste good: garlic and cheese. While we wouldn’t necessarily use the combo when making ice cream (though, don’t tempt us), it will make these green beans your favorite side.

Ingredients:

  • 1 pound fresh green beans, trimmed
  • 2 cloves garlic, finely chopped
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper 
  • ½ cup Parmesan, grated
  • ¼ cup mozzarella, grated

Instructions:

  1. Preheat the oven to 425°F. 
  2. On a large sheet pan, toss the green beans with oil and salt. Place in the oven and toss after 7 minutes. Roast for 10-15 minutes, until the beans are crisp but tender. 
  3. Toss green beans again and sprinkle with garlic and pepper. Top with Parmesan and mozzarella.
  4. Heat the broiler and broil the beans until the cheese is melted and golden brown. This should take 2 to 3 minutes but watch closely to ensure the cheese does not burn. Season with more pepper and serve.

  • 8 ounces (about 2 cups) of elbow macaroni or pasta of your choice
  • 1/4 cup of unsalted butter

  • 2 cups of shredded sharp cheddar cheese
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese

Cheese sauce is a great dish to make yourself, as it’s really easy but is so much better than any shop-bought version. This recipe uses very simple ingredients but has very tasty results. You can easily multiply the ingredients to make a larger amount, or add any extra flavorings you might like. Here are two ideas for using this delicious sauce as well. 

Ingredients:

(Serves 2)

  • 1 tablespoon oil
  • 1 tablespoon plain flour 
  • 1 cup milk
  • ½ teaspoon smoked paprika
  • ½ teaspoon mustard
  • Salt and pepper, to taste
  • ½ cup shredded cheese

Instructions:

  1. Heat the oil in a pan and then add the flour.
  2. Stir well to form a smooth paste.
  3. Gradually add the milk a small amount at a time, stirring well each time to combine it.
  4. Once all the milk is in, add the paprika, mustard, salt, and pepper.
  5. Increase the heat.
  6. Simmer gently stirring constantly for 5 minutes.
  7. Add the cheese and heat for another 5 minutes, until the sauce has thickened.
  8. Remove from the heat ready to be used in your meal.

Cauliflower Cheese

Boil or steam some cauliflower. Place in an oven-proof dish and then pour the cheese sauce over and stir through. Place in the oven for 20-30 minutes. 

Lasagne

Layer the cheese sauce between pasta sheets and bolognese sauce and bake in the oven for 30-40 minutes.

There are two ingredients that make just about anything taste good: garlic and cheese. While we wouldn’t necessarily use the combo when making ice cream (though, don’t tempt us), it will make these green beans your favorite side.

Ingredients:

  • 1 pound fresh green beans, trimmed
  • 2 cloves garlic, finely chopped
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper 
  • ½ cup Parmesan, grated
  • ¼ cup mozzarella, grated

Instructions:

  1. Preheat the oven to 425°F. 
  2. On a large sheet pan, toss the green beans with oil and salt. Place in the oven and toss after 7 minutes. Roast for 10-15 minutes, until the beans are crisp but tender. 
  3. Toss green beans again and sprinkle with garlic and pepper. Top with Parmesan and mozzarella.
  4. Heat the broiler and broil the beans until the cheese is melted and golden brown. This should take 2 to 3 minutes but watch closely to ensure the cheese does not burn. Season with more pepper and serve.
