- 1 large head cauliflower, cut into florets

- 2 cups of milk (whole or 2% recommended)
- 2 cups of shredded cheddar cheese
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 1/4 cup of grated Parmesan cheese

Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside. In a large pot of salted boiling water, blanch the cauliflower florets for 3-4 minutes, or until slightly tender. Drain well and transfer to the prepared baking dish.
- In a separate saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook the roux for 1-2 minutes, stirring constantly, until golden brown and fragrant.
